Baked Dijon Chicken

Reviewed: Sep. 14, 2009
I gave this 4 stars for being an easy and tasty recipe that my whole family liked. It's not fancy but everyone from my husband to my 15 month old son liked it. It was a snap to put together, although I made 2 modifications: italian seasoned breadcrumbs and used chicken breast tenderloins as I think they cook more evenly (I didn't change the cook time and they came out perfect) than whole chicken breasts that can tend to be too thick to cook well. I will definitely make this again!

Veggie Burgers

Reviewed: Feb. 18, 2009
I found this recipe while looking for a veggie burger recipe that did not include soy as almost all of the frozen ones on the market have a soy base (my baby loves veggie burgers but too much soy isn't good). That being said, I needed to change this recipe a bit to make it more appropriate. No egg white for babies under 1 year old so I substituted 2 egg yolks. I used 1/2c oats and 1c cooked brown rice because I had it on hand. If you don't feel like shredding all of those fresh veggies, you should know it works great to use a small bag of organic frozen veggies (I used carrots, peas, green beans and corn) and just roughly chop them in the food processor. They turned out great!
