Cream of Mushroom Soup I

Reviewed: Nov. 7, 2011
Just learning to like mushrooms and decided to make this. The soup is absolutely delicious and simple to make. I will make it all through the winter. The only thing I had to change, out of personal preference, was adding 2 cloves of garlic with the mushrooms and onions. Thanks!

Best Ever Split Pea

Reviewed: Nov. 30, 2010
This recipe was amazing! I have been a vegetarian for years and have been afraid of trying split pea recipes without ham. However, this recipe was so savory, with just a few changes. Along with all the vegetables I added 2 cups of diced potatoes, also replaced chicken broth with vegetable broth. Also, I did not have a seasoning blend, so added 1Tbsp of curry powder, 1 tsp black pepper, 1/2 tsp ground thyme, 1tsp parsley flakes and 2Tbsp soy sauce. After simmering for 2-1/2 hrs as suggested, the flavors were perfectly melded and I blended 1/2 the soup and left the remainder chunky. Absolutely yummy! Thanks for the recipe!

Vegetarian Tortilla Soup

Reviewed: Jun. 17, 2010
SIMPLY DELICIOUS! Such a beautiful mix of flavors and so savory. To make it a meal I added a can of black beans and since cilantro is always used in this house it was thrown on top too :) Thanks for the great recipe!

Vegetarian Ribs

Reviewed: Jun. 17, 2010
I have been a vegetarian for a a while and have been more than happy ditching meat. However, my wonderful husband just chose to be a vegetarian and has been missing meat a little. So, on a whim I tried this recipe with no expectations. I followed it to a T and they turned out amazing. I was worried when I pulled them out to slather on BBQ sauce because they were dry and crispy. The sauce finished them nicely though and they ended up with the yummy taste and consistency of meat. YUM! Can't wait to try again but will use 1/2 recipe.

Sloppy Sams

Reviewed: Sep. 26, 2009
Thank you so much for this recipe! I am coming up on my one year vegetarian anniversary and have been getting bored with some other recipes. I thought I was craving meat, but after trying this, I realized I just needed something better! I prepared as directed just increasing the amounts of garlic and onion a little. I would challenge any meat eater to not have seconds.

Ricotta and Tomato Sandwich

Reviewed: Apr. 2, 2009
I just made this as a late night snack. It was very tasty and very simple. Instead of provolone, I used cheddar since that was all I had. The only thing I would do differently next time would be to sneak in some fresh basil between the tomato and ricotta. Can't wait to try again.

Cheesy Vegetable Lasagna

Reviewed: Feb. 20, 2009
This dish is true to its name. Very cheesy and lots of veggies. It was so satisfying that my husband did not miss the meat. I couldn't fit all the veggies I cooked in the pan, so I will have to cut back next time.

Vietnamese Style Vegetarian Curry Soup

Reviewed: Feb. 20, 2009
This recipe was very good, but didn't turn out like I had hoped. I think that I need to find a better curry powder and I would thoroughly enjoy this recipe.

Spicy African Yam Soup

Reviewed: Feb. 20, 2009
I had never made anything like this and was a little worried about it. I am so happy that I was adventurous because it was amazing. Very hearty and flavorful. It still tasted great when it came out of the freezer 1 month later.

Toscana Soup

Reviewed: Feb. 20, 2009
This soup was so satisfying and delicious! I don't eat meat so I just added some fennel, salt, pepper and red pepper flakes to the onions for a 'sausage' flavor. Awesome!
