Rebecca's Wild Rice Pilaf

Made this for Christmas Eve to go with salmon. Everyone loved it. I thought there was a bit too much butter, though. Tonight I am going to try it with chicken broth rather than the consomme (as someone suggested) to go with roast chicken. Thanks for a great and easy recipe.

Connie's Zucchini "Crab" Cakes

Not sure they taste like crab, but they were a big hit at dinner tonight. I took another's suggestion and baked them on a lightly oiled cookie sheet at 450 for 12-15 minutes each side. I served with cocktail sauce (homemade) and a corn/blackbean salsa. Great dinner. Thanks!

Crayfish or Shrimp Pasta

Great recipe though I did change a bit and followed others' advice. Used a combination of cream and fat free half and half. Made the sauce separately so we could choose how much to put on each serving. Cooked asparagus, mushrooms, cherry toms (split), and green onions, then added uncooked shrimp (didn't have precooked on hand). Assembled according to how much sauce each person wanted (less for my mother-in-law, more for my husband). BIG HIT! McCormick's creole seasoning was perfect. Also added a bit of grated parm when served.

Grandmother's Buttermilk Cornbread

This is the best cornbread I have ever had. I melted the butter in a cast iron pan in the oven. Mixed the ingredients in a separate bowl. When everything was ready, I poured the mix into the pan with the butter and cooked. It didn't take the whole 40 minutes. Question, how many muffins does this make? Are they just as good? I am making this for a church supper, so have to make LOTS.
