Fantastic Black Bean Chili
Yum!! I made a few changes, based on what I had in the fridge and cupboards. I added 2 stalks of diced celery, rotel tomatoes, and 2 8oz cans of tomato sauce. I did this because instead of using 3 cans of beans with the liquid, I used 4 cups of cooked dried beans and I didn't reserve any liquid. I also added a can of corn (drained), 2 tbs cumin, and some red pepper for heat. Fantasic recipe that is easy and fun to play with!! Thanks!!
