Insanely Easy Vegetarian Chili

Reviewed: Aug. 10, 2009
WE love this veggie chili! We add a can of black beans and omit the mushrooms as well as cut back on the cumin. This is a great recipe to experiment with.

Chocolate Chocolate Chip Cookies I

Reviewed: Jul. 20, 2009
Delicious! I did half butter and half shortening. And half brown sugar, half white. The cookies stayed moist even the next day! To make sure your cookies don't flatten put the dough as well as the cookie sheet in the freezer for a few minutes prior to baking.

Apple Butter I

Reviewed: Sep. 21, 2009
Delicious! I used 1/2 red delicious apples and 1/2 gala apples, I also didn't use cloves and only used 1 cup white sugar and 2 cups brown. I cut the cinnamon in half and cooked on high for longer than the recipe required, but my crock pot cooks a bit slow even on high. I bought some freezer safe Ball jars and this recipe filled 5 medium jars. I'm not sure how long it will keep but, I am giving most of the jars away so I didn't bother searching on the internet to find out.

Cinnamon Griddle Cakes

Reviewed: Feb. 24, 2009
I omitted the corn syrup and didn't make the icing. I did add an extra tsp of cinnamon though. The end result was delicious but, a little too sweet for my hubby and I. However, I KNOW that kids would love them. I will make this for my little brother and sister when they come to visit.

Cheater's Enchiladas

Reviewed: Jan. 13, 2011
This is a great recipe, and easy to follow... more importantly, it is easy to adapt. I saute anything I have around the house to make a filling and just put the filling in a corn tortilla and roll it up then cover the enchiladas in enchilada sauce and cheese. Bake for the recommended time and POOF! Eat 'em up!

Chicken Fettuccini Alfredo

Reviewed: Oct. 21, 2009
The best home made alfredo sauce we've had! We halved the recipe and it is still enough to feed my hubby and I for two days. Followed the recipe as written.

Apple Strudel Muffins

Reviewed: Sep. 22, 2009
Very moist! SO moist in fact, I had to cover the tops with aluminum foil and cook an extra 10-15 minutes just so the bottoms wouldn't fall apart. I took the suggestions of the other reviewers and added cinnamon and nutmeg to the batter. My strudel topping came out wrong, i think its because I melted the butter before adding so it didn't crumble correctly, no biggie I put some apple butter (also from this site) on top and it was delicious! Will be making these again and definitely using paper cups next time as well.

Chicken Pot Pie IX

Reviewed: Sep. 11, 2009
Delicious!!! We made some changes, like most reviewers. We cooked the chicken mixture in vegetable broth and added a small-med cubed baking potato as well. We mixed some the gravy in with chicken mixture before putting in the pie shell and then poured the gravy over the top. It wasn't dry, but we loved the gravy so much we are going to make extra next time just to add to our bowls. I glazed the top with egg white and put in the oven for 25 minutes at 375. Oh we cooked the chicken in butter before boiling it. Definitely, read the other reviews before making and you won't be disappointed.

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Aug. 25, 2009
Delicious! Took it to a party and everyone loved it!! I left out the white sugar because it as really sweet enough. I also used apricot preserves, because I didn't want it to have a strong strawberry flavor. The next day we blended what was left and made parfaits.

Green Bean and Potato Salad

Very good! I doubled the potatoes and green bean mixture and let it all sit in the fridge for a few hours, it was even better the next day!

Easy Iced Coffee

Reviewed: Aug. 19, 2009
not impressed. This coffee had too much of a bitter taste in my opinion. But, I like my coffee a bit on the sweet side. I think I will just stick to making lattees the old fashioned way.

Boudreaux's Zydeco Stomp Gumbo

Reviewed: Jul. 13, 2009
We love this recipe! We made a few changes: Used Vegetable broth instead of chicken broth and used a green bell pepper instead of the red pepper. It was still spicy but even I loved it and I'm allergic to pepper so I haven't exactly developed a palate for spicy foods over the years. We will definitely make this again. Don't forget the rice (we used long grain wild rice) and lots of cornbread (About 3 boxes)

Vegan Black Bean Soup

Reviewed: Feb. 26, 2009
Great recipe! My husband and I love having this soup for dinner. We usually add or subtract a few veggies depending on our particular taste at the time. We usually eat it a few nights in a row, and it just gets better each night!
