Eggplant-Ziti Parmesan

I had my reservations about this recipe and rightfully so. If I could give this no stars I would, simply because the eggplant added nothing, actually detracted from, the ziti. It was flavorless and most people, including myself just kind of picked it out of the dish. I should have stuck with my spinach baked ziti instead. If I were to try this again, a big if, I would either make or use the ready-made frozen breaded eggplant slices. Maybe then it would meld with the dish better.

Southwestern Pasta Salad

This was a great recipe! I'm always looking for no-mayo pasta salad recipes since I'm not a fan of a lot of mayo. In addition to black beans I used chick peas to punch up the protein and flavor. I like spicy so I used quite a bit of chili powder. And from a diff pasta salad recipe I've used I knew and reviews I read that said this could tend to be dry I used low-fat Italian dressing for flavor and to help mix everything well. Can't wait to make this again!

Nutty Apple Crisp

This recipe was good though I expected a nuttier flavor. I used walnuts and pecans and even added some directly to the apples but not a very nutty flavor for some reason. I also bought a package of apple crisp and just added additional rolled oats, sugar and nutmeg to save time when making the topping. I also used 2 types of apples, granny smith and red delicious which gave a great varying sweet and sour flavor.

Banana Pudding IV

This is just the banana pudding recipe I was looking for and it turned out great. Much sweeter than the instant version though so beware, I had people tell me they like the way I used to make the banana pudding before because of that. I used vanilla pudding and I really like ginger snaps so I used ginger snap cookies as my bottom layer, kind of like a crust and then crushed ginger snap cookies to sprinkle over the top which looked and tasted great. And I also had some ginger snap cookies on the side while eating my pudding cause like I said, I REALLY like ginger snaps!

Breaded Brussels Sprouts

You know I was nervous about fixing these because though I love brussel sprouts not everyone does. But I still decided to fix them for Thanksgiving and they were a big hit among adults and children. Everyone said they never had brussel sprouts like those before and came back for more. The only thing I changed was using seasoned breadcrumbs. Beware though..I was fixing like 5 diff dishes at a time so I forgot about the sprouts and they got too done and some broke apart. It was okay once I got them in the pan and covered with the topping but just be careful of your time because they can get mushy.

Red Garlic Mashed Potatoes

I cooked this for Thanksgiving and it came out great. kudos to whoever suggested cooking the garlic pieces with the potatoes so they would mash up easier. Also I wanted a slightly crisper coating and better appearance so I spooned these into a foil pan, brushed lightly with a little melted butter and put under the broiler for maybe 5 minutes. Delicious!

Fish Chowder II

Great recipe! I read a few fish chowder recipes but this is the one I went with because it has a great basic style and I'm happy I did. I modified by using chicken broth and clam juice instead of water and I used evaporated milk. I used flounder and added a few stalks of chopped celery the result was a chowder that was good and creamy, delicately flavored with the notes of fish and sweetness from the creamed corn. This recipe seems easy to adapt too and I look forward to trying out different styles. Oh and I used corn starch to get my chowder to the thickness I wanted.
