Fresh Guacamole

Now THAT is a delicious guac! Didn't have some stuff on hand so subbed the roma with 2 large cherry tomatos, used 1/2 tsp chili powder instead of the fresh chili pepper, used about 1/2 tbsp of dried cilantro. Threw it all in the food processor for a minute and was good to go!

Arrowroot Biscuits

Yummy! I made with only 1/3 cup of sugar, but I sprinkled the tops with powdered sugar when they first came out of the oven. It made for a lightly sweet treat. I creamed in only half the butter, then melted the other half and added it. That way the dough was just perfect and needed no extra milk or water to make it moist enough.

Sweet Potato Pie with Marshmallow Meringue Topping

I tried only the topping, and put it on a different sweet potato pie recipe. It was delicious--very light and fluffy, and toasted to a gorgeous light brown. It was extremely sweet though, so next time I'll cut back the sugar in the filling of the pie. My husband put this on his top 5 best pies list, even though it was the first sweet tato pie I've ever made!

Cream Cheese Frosting II

Best cream cheese frosting I've EVER tasted. And I hate, hate, hate most frosting in general. I had no problems with runniness at all; mine was perfectly textured as shown in the photograph. I followed the advice to cream the butter, sugar and vanilla first, then add COLD cream cheese. I used the recipe's exact amounts of all ingredients.

Absolutely Sinful Chocolate Chocolate Chip Cookies

I would have given 3 stars, but my husband would have given 5, so we averaged it out to 4. This was a very cakelike cookie, without being dry. I made one batch to be a plain choco chip cookie, without the added chocolate in the dough. I would add more vanilla next time if I made them that way again. I made a second batch using the chocolate (Ghirardelli) and subing PB chips for chocolate. They were ok... but the dough is not very chocolatey, even though I doubled the amount of chocolate used. It is more of a light hint.

Honey Orange Basil Chicken

I didn't have time to marinade, so I just dumped all the ingredients in a frying pan and boiled the chicken in them, using extra OJ and a little water. When the chicken was done I took it out and added about 1-tsp cornstarch dissolved in water to the pan, and boiled the marinade into a sauce. The only changes I made were I used fresh basil and a fresh squeezed orange, and added another Tbsp honey. It was a very pretty, very easy, very yummy dish! Probably would have been bland without the sauce though.

Mexican Potato Nachos

Gorgonzola Pear Pasta

Literally the BEST dish I've ever made, to date. EVER. I used Gnocchis for the pasta. Also used only 1 tbsp butter and half & half instead of cream, but didn't miss the extra fat. Otherwise don't change a thing; its PERFECT. Husband was so wary of eating it ..."pears and cheese-that's weird!" but then just about licked his bowl clean. Thanks for sharing this easy, tasty, quick recipe!

Iced Pumpkin Cookies

Soft and yummy. Used whole wheat white flour and added an extra 1/2 tsp of bkg powder. Added cinnamon chips to half the batch and they were also delicious, but the plain were my favorite. Also added cinnamon to the glaze.

Sweet Potato Pecan Waffles

Just made these and they were delicious. Used whole wheat flour and Cinnamon instead of nutmeg, but followed the directions to a T otherwise. They were a very soft and moist waffle, not crispy. Served with maple syrup and whipped cream, and it was reminiscent of pumpkin pie.

Cranberry Glop

This was good. I chopped up the cranberries briefly in the food processor instead of leaving them whole. It was missing just something, so we sprinkled cinnamon on it to serve. Also we had whipped cream on top. Those two adjustments made it just right.

Marbled Pumpkin Cheesecake

Worth the effort! I baked mine in a plain ol' 9" pie dish and it came out great. I put the pie dish in a water bath (jelly roll pan with 1-2 inches water) to cook at the said time. I also sub 1/2 the ginger snaps with graham crackers for the crust. Turned out perfect! ***I did have some extra filling, and I made a sweet little cupcake with it. I put a gingersnap in the bottom of a muffin wrapper and poured filling on top. Baked it for a half hour at 350F. It was so cute and tasty--the gingersnap softened into a yummy crust on the bottom. I might make a whole batch like that next time.

Golden Rum Cake

HOW TO AVOID BOX MIX TASTE: Replace the cake mix/eggs/oil/water with the "One - Two - Three - Four Cake II" recipe from this site. (You'll need to halve that recipe.) I still added the box of pudding, at the same time I added the flour. Use cake flour and not A/P! Add the rum just before you fold in the egg whites. Its extra work but worth it. Otherwise followed this as directed, using Malibu Coconut Rum. Yum! I made mini-bundts and am aging one of them. Cant wait to taste in a few days.

Gramma's Date Squares

Absolutely delicious! Changes I made based on reviews and personal preference: 1) For the 3/4 C butter, I used 1/4 C butter, 1/4 C coconut oil and 1/4 C applesauce. I melted before adding to my dry mix. . 2) Used whole wheat flour, worked great. . 3) Halved the sugar in the crust and omitted it entirely from the dates. Can't imagine adding it--would be WAY too sweet. . 4) Added some cloves, cinnamon and allspice to the date mix, which gave a spicy Fall flavor. May leave them out next time as it masked the date flavor. . 5) Precooked the bottom crust for 15 min, no problems with mine falling apart. . Thanks for such a lovely recipe!

Jack-O-Lantern Pumpkin Pancakes

Beware if you like light or flat pancakes. These are hearty, thick, cake-like, moist. I used oat bran for the oats and whole wheat pastry flour. I also added a Tbsp of cider vinegar to the milk and let it "sour" for a few minutes before adding to the dry ingredients. This acts similar to buttermilk and makes for a wonderfully fluffy result. These are so flavorful..they taste like pumpkin pie in pancake format. We served them with real maple syrup and whipped cream. My hubby added blueberries to one of his while it cooked and he reports it was delicious.

Spaghetti Squash with Pine Nuts, Sage, and Romano

Don't know if this is a fair rating of the original recipe because I butchered it up based on what ingredients I had on hand..but it tasted lovely! Used walnuts and slivered almonds instead of pine nuts. Sauteed the walnuts with some garlic in the butter (used 1/2 olive oil). Also added sundried tomatoes. Feta instead of Romano.
