Alex's Raw Chocolate Pudding

Really wanted to love this but it was just ok. Maybe my avocado wasn't ripe enough because the whole thing had a "green" sort of taste. Ended up throwing some chocolate chips in to make it more edible, probably ruining all the nutritional value of it. I may try again though.

Orange Picante Chicken

It wasn't anything too exciting. Tasted like chicken with salsa on it; which really is what it is. It was easy though and pretty good.

Pineapple Pepper Chicken

I cut way back on the sugar, but this was very yummy regardless. I also added some crushed red pepper. The result was tangy and spicy. It made a LOT of sauce, even though I quartered the recipe. I followed the stovetop directions of the first review on here.

Gorgonzola Pear Pasta

Literally the BEST dish I've ever made, to date. EVER. I used Gnocchis for the pasta. Also used only 1 tbsp butter and half & half instead of cream, but didn't miss the extra fat. Otherwise don't change a thing; its PERFECT. Husband was so wary of eating it ..."pears and cheese-that's weird!" but then just about licked his bowl clean. Thanks for sharing this easy, tasty, quick recipe!

Cream Cheese Frosting II

Best cream cheese frosting I've EVER tasted. And I hate, hate, hate most frosting in general. I had no problems with runniness at all; mine was perfectly textured as shown in the photograph. I followed the advice to cream the butter, sugar and vanilla first, then add COLD cream cheese. I used the recipe's exact amounts of all ingredients.

Chicken and Apple Curry

This just didn't do it for us. I think the apples didn't mesh well with the rest of it. It needed something else to it; pretty much just tasted like plain curry/bland.

DH really liked em. I made with whole wheat biscuit mix instead of refrig dough, and I did cut back the amount of bbq substantially. I just kind of eyeballed it. Also added some red hot pepp flakes for kick. I didn't get the "cafeteria food" impression at all with ours.

Iced Pumpkin Cookies

Soft and yummy. Used whole wheat white flour and added an extra 1/2 tsp of bkg powder. Added cinnamon chips to half the batch and they were also delicious, but the plain were my favorite. Also added cinnamon to the glaze.

Neapolitan Cookies I

Sliced just a little thicker than 1/4" and baked these guys for only 9 min at 350F, and they were not hard at all. They kept soft in a Ziplock for the next day as well. They didn't last past 24 hrs, so I can't tell if they keep longer than that! I left the nuts out. I also doubled the chocolate, used vanilla and almond extract for the white layer, and strawberry extract for the pink. They taste sort of like a sugar cookie, but you can distinguish each individual flavor. Yummy. Cute as a button too.

Healthier Graham Cracker Crust

One - Two - Three - Four Cake II

The first time I've ever baked a yellow cake from scratch that tasted good. (Truthfully its only the second time I've ever baked a yellow cake from scratch...). I added 1/4 tsp of almond extract and a dash rum extract in addition to the vanilla for some extra punch. I also did cheat and added some (a small box) instant pudding to the mix for increased moistness. The batter is REALLY thick and pasty before adding the whites. I thought I had done something wrong, but once I folded (not stirred!) in the whites it seemed better. And baked up perfectly. This is light and fluffy for a scratch cake, but a bit denser than a boxed cake. It tastes much more homemade and "real" then cakes loaded with hydrogenated oils.

Golden Rum Cake

HOW TO AVOID BOX MIX TASTE: Replace the cake mix/eggs/oil/water with the "One - Two - Three - Four Cake II" recipe from this site. (You'll need to halve that recipe.) I still added the box of pudding, at the same time I added the flour. Use cake flour and not A/P! Add the rum just before you fold in the egg whites. Its extra work but worth it. Otherwise followed this as directed, using Malibu Coconut Rum. Yum! I made mini-bundts and am aging one of them. Cant wait to taste in a few days.

Absolutely delicious! Changes I made based on reviews and personal preference: 1) For the 3/4 C butter, I used 1/4 C butter, 1/4 C coconut oil and 1/4 C applesauce. I melted before adding to my dry mix. . 2) Used whole wheat flour, worked great. . 3) Halved the sugar in the crust and omitted it entirely from the dates. Can't imagine adding it--would be WAY too sweet. . 4) Added some cloves, cinnamon and allspice to the date mix, which gave a spicy Fall flavor. May leave them out next time as it masked the date flavor. . 5) Precooked the bottom crust for 15 min, no problems with mine falling apart. . Thanks for such a lovely recipe!
