Baked Pork Chops I

These are very tender and flavorful pork chops! The only changes I made were to use 2 cans of cream of mushroom, mixed with 3/4 cup of milk and 1/3 cup of chicken broth (instead of the wine.) I also mixed in some adobo seasoning, garlic salt and onion powder with the flour for additional flavor. Per other reviewers, I cut the baking time down to 40 minutes and then baked for an additional 30 minutes with the sauce. Very good recipe!

Fish Chowder

THIS CHOWDER IS SPECTACULAR!! I made a few changes based on previous reviews and preference. I used an 8 oz container of sliced mushrooms. It looks like a lot but they reduce in size after cooking. I used 1 lb of cod, 1/2 lb of bay scallops, 1 lb of shrimp and 2 cans of minced clams. Instead of buying a separate bottle of clam juice, I saved the juice from the canned clams and mixed it with the flour. Two cans will give you one cup of juice. The variety of seafood added great flavor! I also used a full tablespoon of the Old Bay seasoning which I thought was perfect! I also took other reviewers suggestions and used one can of creamed corn and used 1 cup of half & half in place of the evaporated milk. My family absolutely loved it! Thanks for a great recipe.

I think this recipe has good potential to be a great recipe. I followed the recipe exactly except I only had one 15 oz can of tomato sauce and so added a 15 oz can of diced tomatoes instead. I used the can mushrooms as listed and next time will use fresh mushrooms. I didn't really like the canned taste but that's just my preference. My family and I really liked this recipe but I couldn't help feeling there was something missing or the taste was just off slightly. I think when I make it again I will add more spices and garlic to liven it up a bit. Thanks for sharing.

Chicken Enchiladas V

I thought this recipe was very good. I made a few changes to suit our tastes. I boiled three chicken breasts in chicken broth first and then shredded it. I then doubled the sauce (2 cans of cream of chicken soup and 1 full cup of sour cream). I used 98% fat free soups and light sour cream in order to reduce fat and calories. I used the same amount of green chilis (4 oz) and felt I could have doubled that as well. I think the chicken paired with the onions and chili powder was a great filling for the enchiladas. I sprinkled low fat Mexican cheese on top and added chopped green onions once it was done baking. Took 45 minutes to bake at 350 degrees. Good recipe!

Mushroom and Potato Chowder

We thought this recipe was very good. I followed the recipe exactly except I substituted corn for the celery and carrots. I also doubled the potatoes and in the end felt like I could have used even more. My 8 year old said it was the best soup she ever had! Thanks for sharing!

Beef Stew IV

I thought this recipe was very, very good. I filled a zip lock bag with 1/4 cup of flour and a teaspoon each of garlic salt, onion powder, black pepper and Adobo seasoning mixture. I placed the stew meat in the bag to coat and then browned the meat in olive oil. I used 4 cups of beef broth instead of the water and only had to cook the beef for an hour and it was plenty tender. I then added the carrots, potatoes and corn and cooked for an additonal 30 minutes. I didn't need to add any cornstarch or flour to thicken the sauce, it was perfect as is! My family raved over the meal and even my picky 2 year old ate it! Thanks for sharing.

Deviled Eggs

Taco Salad III

I thought this recipe made a very good taco salad! The only changes I made were to use Lite French dressing and I omitted the beans (personal preference). I did not mix the dressing in the salad but put it on the table and let everyone add how much they wanted. Very good!

Boilermaker Tailgate Chili

This is by far our favorite chili recipe! The only negative I can say is there are sooo many ingredients to add! I usually leave out the bacon bits, beer, cayenne pepper and celery and it still tastes fantastic! Thanks for sharing!

Chicken Spaghetti III

This recipe is very good. I did not have cream of mushroom soup on hand so I substituted cream of chicken instead. I also used 2 cups of shredded cheddar cheese in place of the processed cheese. I think this is a great, quick recipe to put together. Thanks!

Catherine's Spicy Chicken Soup

This recipe was very good! I followed it exactly except I did not mix in the sour cream. I ladled the soup in the bowls, put a layer of chipotle cheddar shredded cheese, chopped up green onions and a "dollop" of sour cream. It was fantastic! Thanks for sharing!

Italian Sausage Tortellini Soup

This recipe was very, very good. The only change I made was to use a whole pound (4 links) of italian sausage instead of just one link. I also used portobella mushroom tortellini. Great recipe, will definitely use again, over and over!

Italian Spaghetti Sauce with Meatballs

This is the best spaghetti sauce ever! I will never buy (unless I absolutely have to) another jar of spaghetti sauce again! The sauce is very tasty and has just the right seasoning. Very easy to make.
