Blueberry Turnovers

I used more sugar than called for but didn't measure and it worked perfectly! I have very tart and juicy organic blueberries though. I also added a couple pinches of nutmeg and a teaspoon or two of cinnamon. No measurements since I made these with a couple of toddlers :). After they cooked, we made a creamy topping of butter, powdered sugar, and Tahitian vanilla paste. They were so good that the two boys (Ages 2 and 5) were trying to steal one anothers' rolls because they had eaten the whole pan full! The 5 year old kept saying "They are even yummier with the sauce on them!" needless to say, these will be made again:) They are super easy, very kid-friendly, and a quick make, bake, and cleanup. Not to mention, Beautiful! we dusted the tops of them with cinnamon for looks and it was incredible! Can't approve this recipe enough!!!!

Grilled Tilapia with Mango Salsa

I made this with frozen bass from fishing season surplus. I didn't have all the ingredients, so I didn't use a sweet pepper, just added 1 jalapeno, 1 red chile, and 1 green chile cut up in large pieces so I could pick them out after their flavors had merged with the rest of the dish (I like spicy, but not too hot). I made the salsa the night before and then marinated it with the fish for about an hour before cooking. Then I cooked all of it in a non-stick skillet until the fish was done and the salsa was charred a bit. Lastly, I sprinkled paprika on top of the fish with a bit of lime zest and lime juice. I served it with colored toasted tortilla chips on a bed of fennel and jasmine rice with lemon and lime. The dish smelled wonderfully fragrant (not at all fishy due to the citrus acids) and tasted heavenly! Finally something else to make with bass other than fish and chips! The bass is not as good as the tilapia, but it is still quite good:)

Bread Pudding II

I never had bread pudding before this recipe, but wanted to use up some really good stale organic muffins and some miscellaneous bagels. I believe I ended up with a cinnamon raisin and a blueberry bagel and about 2 blueberry muffins. I only used three eggs and added a dash of nutmeg and a couple handfuls of wheat germ. I also squirted in about a tablespoon of clover honey into the batter and used half white sugar and half brown. I also threw in a handful of tiny wild blueberries to clean out my freezer. I whipped the egg, sweetners, milk, spices together with my standing kitchenaid mixer before pouring on top of the breads. Then I sprinkled brown sugar on top. I also baked it for about 55 minutes. It really turned out well! It is absolutely perfect!!! And since I used skim milk, blueberries, wheat germ, and omega-3 eggs, it's actually quite healthy too. I didnt use a sauce, as it was moist and sweet enough standing alone. I tried the recipe using chocolate chips, and even though I'm an avid chocoholic, the blueberries tasted far better. Great Recipe!!!!

Spinach Lasagna III

I love this recipe! Every once in a while I'll get in the mood for an extra little kick, and since I'm no longer a vegetarian, I add a thin layer of cooked sausage right in the middle. Its fantastic! I probably add more cheese too, since I don't measure it. I love the flavor of Romano and ricotta cheeses, but sometimes plain romano is hard to find where I live, so I just use romano and parm mix. I have also used fresh herbs before, I just use more of them.

Libby's® Famous Pumpkin Pie

Best Pumpkin Pie I've ever had! I do add a little more sugar and spices, sometimes sprinkling cinnamon and sugar on top. It gives it a nice autumn look and heightens the taste and arouma even more!

Fish Stuffing Bake

My mom used to make a variation of this recipe. however, she would just brush the fish with butter and then sprinkle chicken stuffing mix on the top. It is amazing!!! We even use it with just fresh bass after a freshwater fishing trip on the farm. You can add whatever herbs and spices you like, but we usually just sprinkle with salt and pepper.

Cranberry Orange Loaf

These are awesome!!! I followed the recipe although I might have put in more orange zest; I didn't measure, just used the peel and pith of 2 small south african oranges. and baked them into muffins and they only took about 30 minutes to bake. i also sprinkled some sugar on the top of a few and they taste wonderful!

Snickerdoodles IV

Great! Just like mom used to make! If the dough is too soft, my mother would put the dough in the fridge before rolling them in sugar and baking them. However, this recipe did not exactly need it, mine shaped up just fine. I'm eating them now with a tall glass of ice cold milk... yummmm.

White Chili I

Used fresh jalapenos instead of chilies. Also used red pepper instead of cayenne. Added another can of garbanzos in addition to the navy beans. Was good, but I added several cups too much chicken broth by accident so mine was too watery to compare to what it is supposed to be like.

Green Tomato Pie II

Not bad, but the tomatoes do have a strange texture that make them taste like slimy candy. It's not something you would want more than one piece of. I sprinkled cinnamon and sugar on the top of the top crust and baked it more than double the time, covering the edges with aluminum foil when they started to brown. It was not watery at all, but I cooked it longer and could have added more cornstarch than called for because I just used a silverware tablespoon to measure.Might help to peel it or to mince the peel before adding.

Blueberry Pie

I've never had blueberry pie before, but had gallons upon gallons of last year's harvest that I have to clean out of my freezer, so I tried this. I really don't like blueberries a whole lot, but this pie I must say is Amazing!!! My blueberries are a bit tart, so I didn't add lemon juice and they're still a little tart. I did use 5 cups frozen berries with absolutely NO juice at all. I added 5 T all purpose flour and 1-1/4 cup sugar, and overlapped cutout stars for the top instead of lattice. I also heaped the 1/2 teaspoon of cinnamon, so it was more like a whole teaspoon. I cooked it for 1 hour 25 minutes at 375, covering it loosely for about 30 minutes halfway through cooking. It was FANTASTIC!! I ate one piece 5 minutes out of the oven and it was perfect.
