Flatlander Chili

I used 1.4 lbs ground beef, 2 cans low sodium dark red kidney beans, small can tomato paste, can petite diced tomatoes, about 20 oz. tomato juice, 1/4 cup chili powder, 2 tbsp cumin, sugar, sprinkle of garlic powder, salt, pepper, italian seasoning, and I added diced onions and green pepper. It was delicious! Mild, the way I like it. Reminded me of Wendy's chili without the bite.

Shrimp Scampi Bake

I followed the recipe and it was a good amount for 4 adult servings if you use only 1 1/2 lbs. of jumbo shrimp like I did. I used a ICBINB margarine spread instead of butter, used Grey Poupon mild creamy dijon mustard, doubled the parsley, added a little white wine, and added sauteed portebello mushroom slices. It was delicious! I will probably add a little more garlic next time, but it had a light taste the way it was. Even the kids and husband, who isn't a big pasta eater, loved it.

Marie's Easy Slow Cooker Pot Roast

I used 2 cups beef broth, some Montreal Steak Seasonng and a little Worchestire sauce instead of plain water. It was very moist and it was good but I think it needed a little more salt or something to give it a little more flavor. I would add more spices next time.

Lemon Chicken Piccata

I followed the recipe exactly except for adding capers and not only was there not enough sauce, but it came out a very bitter lemon taste. I used fresh lemons, but I think the recipe needs something to neutralize the bitter lemon more.

Sweetheart Cookies

Delicious! These were so good and they looked so pretty like they came from a store. My husband said no one would believe they were homemade. I made three kinds using apricot, blackberry and raspberry. They had a wonderful light taste. I was a little more generous on the amount of preserves I put into the cookies so I made the center hole a little bigger. Just make sure you don't make the indention too deep or it will fall apart later. Loved these!

Linda's Cranberry Cookies

These were delicious! They had a wonderful taste. If you want a big cranberry taste you will need to add more to the mix, but I loved it just the way it was. My husband is not big on cookies, but he loved these. My kids loved them too. I can't wait to try it with other combinations.

Shrimp Salad with Vinaigrette

I made this following the original recipe, minus the pimentos, and it was light, however it was lacking flavor. I let the shrimp sit in everything for 2 hours, but the orange flavor never got into the shrimp. Also, there really wasn't enough "dressing" with the mixture to toss with lettuce so I had to add more oil, vinegar and some orange juice. It made a light appetizer salad, but we couldn't make a meal out of it. I don't know if the pimentos would have made a difference, but it needed a little punch and more dressing for me.

Strawberry Glazed Pie

My family loves this, but we love anything strawberry. I use the pre-made reduced fat graham cracker crusts which is probably why mine usually breaks up when I try to serve it. My filling never seems to stay together, but I don't let it sit overnight. Mine doesn't look like a pretty piece of pie when I serve it, but my family loves the combination of strawberry filling, graham cracker crust and cool whip on top so they don't care what it looks like. Delicious!

Easy Batter Fruit Cobbler

It tends to get a bake a little drier and there isn't as much filling as I usually like in cobbler so I try to use more fruit. Awesome taste!

Slow Cooker Pulled Pork

I used pork tenderloin and cooked for 6 to 7 hours. It was so tender and easy to pull apart. Delicious! The sweetness all depends on which barbecue sauce you pick. I like it sweet so I used Kraft honey bbq sauce and let it sit with the sauce for about an hour.

Broiled Tilapia Parmesan

This fish was amazing. Even my 9 year old son asked for seconds. I used light mayo and I Can't Believe It's Not Butter margarine and substituted regular salt for celery salt. I also broiled the fish an extra 3-5 minutes to make sure it was cooked throughout. It had a great cheesy flavor that was perfectly balanced with the delicate fish. Very simple and delicious!
