Flatlander Chili
I used 1.4 lbs ground beef, 2 cans low sodium dark red kidney beans, small can tomato paste, can petite diced tomatoes, about 20 oz. tomato juice, 1/4 cup chili powder, 2 tbsp cumin, sugar, sprinkle of garlic powder, salt, pepper, italian seasoning, and I added diced onions and green pepper. It was delicious! Mild, the way I like it. Reminded me of Wendy's chili without the bite.

Shrimp Scampi Bake
I followed the recipe and it was a good amount for 4 adult servings if you use only 1 1/2 lbs. of jumbo shrimp like I did. I used a ICBINB margarine spread instead of butter, used Grey Poupon mild creamy dijon mustard, doubled the parsley, added a little white wine, and added sauteed portebello mushroom slices. It was delicious! I will probably add a little more garlic next time, but it had a light taste the way it was. Even the kids and husband, who isn't a big pasta eater, loved it.

Marie's Easy Slow Cooker Pot Roast
I used 2 cups beef broth, some Montreal Steak Seasonng and a little Worchestire sauce instead of plain water. It was very moist and it was good but I think it needed a little more salt or something to give it a little more flavor. I would add more spices next time.
