I'm a nurse and wife and mother of two, and I've always loved to bake. I often take my homemade treats to work to share with my co-workers, and they love everything I make, and that way I don't end up eating all of it, so it's a win-win situation!

I love to bake anything, more than cooking.
My favorite family cooking traditions
Making lots of pumpkin recipes in the fall, and cookies and candy at Christmastime. I especially love homemade caramels that I found on this site. Everyone at work asks for them around the holidays.

Country Pumpkin Muffins
These are sooo yummy! I did like other people suggested and used the whole 15 oz can of pumpkin and reduced the water to 1/4 cup and I used half white flour and half whole wheat flour, and half white sugar and half brown sugar, as I didn't have enough white sugar. They smelled so delicious baking, and tasted even MORE delicious!

Finnish Kropser (Baked Pancakes)
I made this for the first time the other day, and it was delicious! I also baked it at 400 for 40 mins, and it got a little dark around the edges, so I covered it with aluminum foil for the last few minutes as I was afraid it wouldn't be fully cooked in the center. We ate it with syrup, but next time I think I'll stir blueberries into the batter. So easy and yummy!!

Scones
Yummy! These are delicious! I beat the egg and then just added the milk to make one cup, and I didn't even end up using the whole cup of the milk-egg mixture. I added 2 tsp. of cinnamon and about a half cup of chopped pecans, and sprinkled turbinado sugar on top of them and they are delicious! I can't wait to make them again and add fresh blueberries.
