I had several different colored peppers left from my garden that needed cooking, so I ended up with some pieces instead of whole peppers. I slivered them and layered them with the rice mixture and cheese. Topped it with tomato soup, (I mixed in a little hot pepper sauce and Oregano for a little kick.) and cheese and baked as directed. Came out luscious. I live alone, so I froze what I didn't eat in individual servings. I'll get to enjoy this several times without the work!
