French Toast Corners

This was great! My two boys (6 and 3) couldn't get enough. They loved the small size - perfect for dipping. I did add a little more cinnamon than the 1/2 teaspoon. Will definitely make this again!

Southwest Chicken and Pasta

This was a huge hit at my house! My husband and son devoured it. I omitted the red pepper, and used pico de gallo instead of the salsa since that's what I had on hand. I thought it had just the right amount of sauce. Will definitely make again!

Oregano-Lemon Chicken

My family loved this! I used 3 large chicken breasts cut in half and added an extra clove of garlic. The 45 minute cook time was perfect. I lined the pan with foil to make cleanup easier. The chicken came out juicy with just enough sauce.

Cheddar Broccoli Chicken and Mashed Potatoes

This was just ok for me. I ended up doubling the soup and the milk since we prefer a lot of sauce. I also grilled the chicken separately, then combined it with the soup and broccoli at the end. I think it was the flavor of the soup that just made this seem a bit "off" to me. Next time I might do as someone else suggested and make my own cheese sauce instead of the soup. My husband really liked it, though, so maybe it is just me.

Sharktooth Pasta

My whole family LOVED this! We made some changes, based on what we had on hand and tripled the recipe for our family of 6. We used 1 can cream of mushroom soup and 2 of cream of chicken since that's what we had on hand, and added a bit of water in addition to the milk. Also added some grilled chicken, substituted linguine for the farfalle, and added significantly more cheese (probably 2 cups, melted into the sauce.) Next time I will add fresh broccoli! My picky kids devoured it. Will definitely make again.

Porcupine Meatballs II

I used long-grain white rice instead of the instant and doubled the amount of simmering time, and it still never got done all the way. Next time I think I will precook the rice. My husband and kids still ate it though and said it tasted good, aside from the crunchy rice. I did double the soup since we prefer a lot of sauce. It's a really fun recipe though, so I will give it another chance for sure.

Garlic Pasta

This was very good. I made a few changes - added 4 tbsp butter and fresh steamed broccoli, omitted the parsley since I didn't have any on hand, and used dried oregano and 3 tbsp jar garlic instead of fresh since that's what I had on hand. It was great and all the kids and adults in our household loved it. Will definitely make again.

Egg-Free Dairy-Free Nut-Free Cake

These were really good! My daughter has an egg allergy, so I made these for her 3-year-old soccer team party. The kids ate them up and many of the parents were surprised they were dairy and egg free. I doubled the recipe and it made 22 regular-sized cupcakes. I also followed the advice of a previous reviewer and used 6 TBSP applesauce and 6 TBSP oil (for a double batch) to cut down on the oil. I also used whole wheat flour and it worked out fine. They took about 20 minutes in the oven and were perfectly done. Will definitely make again!
