Egg-Free Dairy-Free Nut-Free Cake
These were really good! My daughter has an egg allergy, so I made these for her 3-year-old soccer team party. The kids ate them up and many of the parents were surprised they were dairy and egg free. I doubled the recipe and it made 22 regular-sized cupcakes. I also followed the advice of a previous reviewer and used 6 TBSP applesauce and 6 TBSP oil (for a double batch) to cut down on the oil. I also used whole wheat flour and it worked out fine. They took about 20 minutes in the oven and were perfectly done. Will definitely make again!

Garlic Pasta
This was very good. I made a few changes - added 4 tbsp butter and fresh steamed broccoli, omitted the parsley since I didn't have any on hand, and used dried oregano and 3 tbsp jar garlic instead of fresh since that's what I had on hand. It was great and all the kids and adults in our household loved it. Will definitely make again.

Porcupine Meatballs II
I used long-grain white rice instead of the instant and doubled the amount of simmering time, and it still never got done all the way. Next time I think I will precook the rice. My husband and kids still ate it though and said it tasted good, aside from the crunchy rice. I did double the soup since we prefer a lot of sauce. It's a really fun recipe though, so I will give it another chance for sure.
