Mom's Zucchini Bread

Made this recipe as is and loved it! Second time I made it in 1 regular loaf pan and 2 mini loaves which was great to give away to a friend. I made alterations from the 1st time I made it because I was really not thrilled using all that oil. I used half applesauce/half canola the second time and half brown sugar/white sugar (also reduced the sugar to 1 & half cups). Added a whole extra cup of zucchini to see how that would go and it was great! I thought these changes better fit my tastes. I think I will be adding some new mix-ins based on reviews and a friend's suggestion, like cherries or dates, or maybe raisins.

Beef Stew VI

This is almost exactly like my mom's beef stew I've eaten my whole life. I've made it 2 times, and I still like hers better, I think I was just trying to create my own because mine never tastes as good as hers when I make it! I think that's true of all food made by our mom's though! Her's has an added 8oz. can of tomato sauce, and I think I will continue to add that, it changes it for the better. Trhis is a great start though, and fairly easy.

Cream Cheese Pound Cake III

Love this! I have only ever made the 7up pound cakes before this, and I think this is even better! Very old school, down home flavor. I followed the directions exactly, added 1/2 tsp almond extract and used cake flour instead of all-purpose because I had it on hand and I know it makes cakes very velvety. I did start with room temp butter, cream cheese, and eggs, a must to get the best texture. The change I would make, is maybe 1/2 cup less sugar next time, it is pretty sweet and I would like it a little less so that I can add a glaze.

Easy Pork Chop Casserole

I give this recipe 5 stars as is, for being fast, easy, and pretty tasty. I tweaked it a bit the 2nd time and thought it was even better. I used only half of the packet of soup mix (Beefy Onion) because I wanted to add a little of my own spices, a few dashes garlic powder, onion powder, and black pepper. I used the full can of liquid, I didn't think it was too runny at all (as some others suggested). I did however use 1% milk instead of water. I used button mushrooms, but might try a portabella next time. This would be wonderful served over potatoes or rice, but I prefer egg noodles and it was delish! I served it with some steamed green beans. Over all, a great pork chop, which I usually have trouble with! They stayed tender and flavorful!

Campbell's® Easy Chicken and Cheese Enchiladas

I always add black or pinto beans to the filling, and use the fat free cream of chicken soup and low fat sour cream. I have made these with other cheese too, but like Monterey best. I also use whole grain, or flavored tortillas in place of plain ones. Serve with sour cream, chopped tomato or salsa, and a side of sweet corn bread, very yummy!

Chicken and Biscuit Casserole

I just made this for the 1st time tonight and followed the recipe exact (except cut in half because it's just my husband and I) and like many others I used frozen peas. I made it in a 11x7 pan but kept the same amount of biscuit topping to make sure I covered the entire top. Oh, I also used buttermilk in the biscuits instead of regular milk because I think they taste awesome that way! Overall, I loved the recipe but I think it was a bit bland so I will add more seasoning next time, probably poultry seasoning would be great! One more thing, it's wonderful making a "casserole" type recipe without having to use cans of soup (and all the sodium and additives and garbage that come along with it!).

German Apple Cake I

Made this once and it was awesome! I did make it agin last night and used Granny Smith's because they are so delicously tart they balance the sweet and cinnamon flavors so nicely. I also used 1 cup wheat flour and 1 white flour, and cut the sugar by a half cup and then used part white and brown sugar (I love how brown sugar tastes with apples). I added some ginger witht the spices too, because I think it compliments apples and cinnamon really well. It is a delicous cake as is but I made my changes and loved it even more.

Dump Cake V

This is just the best! I love it and it is always a hit with whoever you serve it to. I've never tried it with ice cream as some reviewers have suggested but I will have to, sounds amazing! I also only use one stick (1/2 cup) of butter and find that to be perfect. I've never made this with the coconut and walnuts but have eaten that way and it is also great (I just prefer without when I make it myself). Yummy!!

Swiss Chicken Casserole II

I love this easy chicken recipe. I've made it 2 times, both times I added broccoli and I think it makes the dish. Next time I'll add peas. Also, I cut the chicken into chunks and liked it that way better. Easy and yummy.

Isaiah's Pretzel Fried Chicken

I made these last night for the first time. Pretty good, but not as great as I hoped. I used the butter pretzels and chicken tender strips because they cook up a little faster. I just thought they were lacking flavor, after reading other's reviews maybe I'll double the spices next time.

Chicken Enchiladas I

I made these last night, my first attempt ever at homemade enchiladas. I only made a couple changes, used half cheddar and half monterey jack cheese, I like it better. I also added chilis instead of green pepper like many others because I can't have green peppers. And I added a can of black beans, because they're great in everything! My fiance and I both loved them. Very Good!

Flourless Peanut Butter Cookies

I always love these! Delicious and easy. I do add a splash of vanilla like many other reviewers. I usually use mostly brown sugar, I just like it better than white. I also have used part raw sugar, and they tasted great! Also, usually use egg whites only, just a personal preference.

Crustless Spinach Quiche

Awesome & delicious! I did use cheddar cheese as many other suggested and only 2 cups of it. Added a dash of garlic powder and onion powder to the egg mixture also. Next time I may use the muenster cheese though to see how it is. I loved this and it was the perfect low-carb dish I was looking for. Reheats well too, really yummy for lunch or breakfast the next day!
