About this Cook
I am a 33y/o wife and mother of 1 (so far). I have always loved to cook, even as a little girl. Both my grandmother's are Italian so I started learning by sitting on the counter when I was 2. Over the years I not only became the main cook in my house growing up but expanded to baking, my true passion. My husband is in the AF and is gone for weeks and months at a time so I cook like crazy when he is home.
My favorite things to cook
I love to bake cakes and pastries. My mother says that I can make anything out of cake...I like to do "custom and unique" cakes. I am starting to get really comfortable with fondant. I am always online watching videos to learn new techniques. I also like to put spins on dishes I have mastered.
My favorite family cooking traditions
For Christmas Eve one of the dishes that was always made was stuffed calamari in a marinara sauce over linguine. My great grandfather passed the responsibility to my grandmother and great aunt. When my grandmother moved to FL I started helping my great aunt. 2 years later, my aunt passed and I have been "the maker of the squid" ( as my family calls me) ever since. I started teaching my son last Christmas, he is 14. This only happens once a year but it is the single most favorite thing I cook all year because of the traditions it represents.
My cooking triumphs
I made a full sheet cake in a Candyland theme with homemade mm fondant. It took HOURS but it really came out nice...looked just like the board. I even made sugar cookies to represent the cards and tokens. It was the first cake I had been asked to do for someone else. Ever since then I get several requests a year.
My cooking tragedies
When I was about 16 I wanted to make this boy I was dating a key lime pie. I however, had no idea that there was actually a difference between key limes and regular limes. So when I couldn't find key lime juice I used regular lime juice...It was the most horrible thing I ate...I will give that boy credit, he didn't say a word until I said that it was horrible. TO this day I will not make a key lime pie

Manicotti Shells
This recipe is MOST DEFINATELY Manicotti shells. As a 2nd generation Italian with relatives from Sicily, Naples and Calabrese, believe me these are it. I use club soda instead of water though, but either way wonderful!!!
