About this Cook
I have three children ages 25....... 17...... and 3 years. I also am a gramma to a beautiful 4 year old boy. I love to cook (especially baking) and I love taking care of my family. Luckily, my wonderful husband has afforded me the awesome job of stay at home mom (and gramma). I'm always looking for new ways to entertain the kids and new recipes to feed them. I recently lost 55 pounds with Weight Watchers and am on the lookout for low fat and fabulous recipes. Allrecipes members never let me down!! I only rate a recipe if I feel it is outstanding for myself and my family. If we don't care for it, I just delete it from my box. I don't want to deter anyone from trying a recipe just because we didn't like it. That is why you will mostly see 5 star recipes in my reviews.
My favorite things to cook
I love to bake, the boys and I have so much fun. Anything in the crockpot is great. I also love Mexican food and Pasta dishes.
My favorite family cooking traditions
Making a big Sunday dinner. It's something that has been a tradition since I was a little girl. I can remember my mom being in the kitchen all day slow cooking her Italian specialties like chicken cacciatore or pasta with meatballs & sausage. Her fresh homemade tomato sauce can't be beat.
My cooking triumphs
I made a three tier cake for my sisters wedding. It was the middle of August and I was so worried it would be disastrous, but it turned out great.

Eclairs II
Incredible!! Made miniature sized shells and took them to a baby shower. I got so many compliments- nobody could believe that they didn 't come from a bakery. Followed the recipe exactly and these were just perfect. Even got a couple of orders to make for Easter. Thank you so much for sharing this recipe.

Lemon Coconut Loaf
This loaf was just amazing!! I did use lime juice rather than lemon- 6 tsp. and I subbed buttermilk for the milk. It took 50 minutes in my oven. The bread was so moist and tender crumbed. I got nothing but compliments all day. Thank you for sharing this recipe.

Irresistible Irish Soda Bread
Made a delicious, moist bread. I don't know if it is true Irish soda bread, as every one I have ever had has been dry and not very flavorful. This was so good and sliced beautifully. Thank you for this recipe.
