Evin's Indian Apricot Chicken
We loved this...very easy to make! I made the following few adjustments based on previous reviews: Used 2 T of Apple Cider Vinegar (in place of 1/4 C of white vinegar), added diced celery (sauted with onion), reduced Garam Marsala by 1/4 tsp and added 1/4 tsp yellow sweet curry, and a dash of cayenne pepper. For color, I added some sliced roasted red & yellow pepper. Served with Jasmine Rice. Topped with fresh cilantro. Very pretty and so good. A great dish to serve company - that likes Indian food. I will make sure to pick up some Naan next time I make this!

Peppermint Meringues
Very easy to make..despite my pipping fiasco. I tried using a pipping bag but found it oh so difficult to get the merinque inside the bag. Though I doubled the recipe, I lost a bit of the batter due to the mess. I ultimately ended up using a spoon - which is a tad more difficult in trying to make them uniformly attractive. I will try again with a large plastic bag (so I can seal up the batter) and snip a corner. I used a touch of red food coloring to give a candy cane swipe of color thoughout the cookie - very pretty with the dusting of crushed candy canes. I may try to add a touch of green food coloring next time (w/ the red).

Awesome and Easy Creamy Corn Casserole
I added this dish at the last minute because I wanted another color for our Thanksgiving Plate. It was a huge hit - delicious! Hubby said we have to keep this one on the regular Thanksgiving menu. I added a bit of sugar (maybe about 1/8 cup), buttered the casserole dish and baked for exactly one hour. PERFECT!
