Quick Crescent Taco Pie

Reviewed: Feb. 18, 2009
Thanks for this wonderful recipe! We had an afterschool function to get to quickly, and I had no time to waste- this dinner was done very quickly. Also, my picky kids loved it and had seconds! I did arrange the dough a little differently, though...I put the dough "pointy side" out to form a sunburst pattern, then pulled the tips over the meat mixture- so it kind of enclosed it a little more.

Take-Out Fake-Out Pollo Con Crema

Reviewed: Mar. 3, 2011
This was wonderful! I think the chicken breasts I used must have been on the small side- because there was a lot of sauce, and could have used more chicken. I didn't have any dried anaheim or Californnia chiles, so I used chopped green chiles. I also put the filling in a corn tortilla instead. It was wonderful!

Healthy Banana Cookies

Reviewed: Aug. 15, 2011
These cookies are pretty yummy- even my picky eater ate several! I used an extra cup of oats, added 1/3 cup honey, a dash of cinnamon, and used applesauce instead of oil. Instead of dates, I used chocolate chips. I forgot to let them sit for 15 minutes after mixing, so I'm not sure if that changes anything, but the texture was slightly rubbery. I'll let them sit next time and see if it makes a difference. They are chewy, just sweet enough- and healthy, what more could you ask for? Perfect for an after school snack.

Sunday Best Fruit Salad

Reviewed: Jun. 1, 2010
I decided to try this fruit salad to bring to a friend's BBQ, because it looked easy and had good reviews. First, it was easy to make- and didn't require specialized or expensive ingredients. I was a little skeptical about the peach pie filling at first, but like the other reviewers have said- it really does make the fruit salad! It wasn't sickeningly sweet like I was afraid of, it just gave the fruit a light peachy glaze. The only thing I would change next time is to not add the entire can of pie filling, there was some extra around the bottom of the dish at the end. I got lots of compliments on this salad! I had NO leftovers. My friend was impressed that the apples and bananas didn't brown at all, and the fruit salad was out for a few hours at the BBQ. Will definitely make again!

Apple Squares

Reviewed: Aug. 31, 2010
YUM! This is exactly what I was looking for. These bars were pretty easy to make...it's the day after I made them and the pan of them is almost gone already! I definitely should have doubled the recipe. The only changes I made were to use 1 cup instead of 1/2 cup of chopped apples. I also took the other's advice, and added 1/4 tsp. almond extract. I baked for 25 minutes, and they came out perfect. The cinnamon-sugar topping made a little too much, so I wouldn't make so much next time. The only thing that was a bit tricky, is that the bars were a little hard to keep in a bar shape when I went to take them out of the pan, not a big deal though- just required some being careful. The consistency is great, not too dense, not too light. Definitely a keeper.

Overnight Apple Cinnamon French Toast

Reviewed: Jun. 15, 2010
I LOVED this yummy french toast, and it was so easy! This was the perfect recipe for our busy family- I never have the time or energy to cook up a nice breakfast, but since this was 'make ahead', it saved me! I did change the amount of bread- I was using a smaller baking dish, so I ended up only using 8 slices of bread. I actually don't know how I could have fit 20 pieces of bread in my LARGEST baking pan, though. I also found 'no sugar added' apple pie filling, and chose that instead, after reading other reviews saying it was too sugary. It was great! My oven tends to cook a little quicker, so it only took about 50 minutes, and then 3 minutes on broil. The consistency wasn't as crispy as some people make their french toast- it was kind of a mix between bread pudding and french toast. It didn't bother anyone, though. I will DEFINITELY make this again, and maybe even try different pie filling flavors :)

Cinnamon, Spice and Everything Nice Cookies

Reviewed: Jun. 13, 2010
I bought a bag of cinnamon chips awhile back, because I had never seen them before- and I finally found a recipe to use them! First off, I didn't have shortening, and it turned out I was a little short on butter- so I used margarine. Next time I will use butter, because everytime I use margarine for cookies- the consistency is a little too "cake-like" for my taste. I followed the rest of the recipe, except I didn't have ginger- so I added a little allspice. The recipe said to use an ungreased cookie sheet, and I normally use Pam- this time I didn't, and the cookies were a little difficult to get off the sheet. Also, like all the other people said, the dough was definitely not stiff. I tried putting it in the freezer for 15 minutes since I was short on time- but it still was not stiff enough to be able to roll into balls. So, I dropped the scoops onto the sheet and then sprinkled with sugar...they didn't come out as 'pretty' as other people have said, only cuz I couldn't roll them in sugar. BUT, overall...they taste pretty yummy! The house smelled like Christmas time while they were baking. I will be making them again, but will try to fix the problems I had the first time.

Sharktooth Pasta

Reviewed: Sep. 19, 2011
I hate to rain on the parade, but our family did not like this. I threw it together on a busy night, because I had all the ingredients- but it just tasted like cream of chicken soup...pretty bland, and my kids said it tasted like tuna noodle casserole (and they hate tuna...). I won't be making this again :\

Chewy Noels

Reviewed: Dec. 12, 2011
When I was mixing the ingredients, and noticed it's pretty much all brown sugar, I was really worried these would be sickeningly sweet. They aren't at all! They're very light, with a tasty nutty, buttery flavor. I did use a 9 x 11 instead, because I was afraid of them being too gooey in the middle, and it worked great- they're slightly thinner, but still light and fluffy (not cookie like). I used pecans, and I think they taste great...I made them this morning, and they are already gone! My hubby and kids are pretty picky- and they ALL said these were great!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: Jan. 7, 2011
These cupcakes were pretty good, but they didn't taste quite as cookie-doughy as I was hoping. I think I should have made the cookie dough balls bigger maybe. I also took others advice, and used a chocolate cake mix- so maybe that overpowered the dough. I might try it again with yellow cake mix and more cookie dough. Cool idea though! The kids liked them.

Beef Stew VI

Reviewed: Nov. 1, 2010
This stew was great! It passed the ultimate test- my picky husband. I did let it cook longer during the second half- only because I had to be out of the house for awhile. I did take the other people's advice- I put the stew meat in a bag with flour, garlic powder, and onion powder and coated it before browning. I also doubled the cornstarch. It was yummy!

Disappearing Marshmallow Brownies

Reviewed: Jun. 15, 2010
Hmm...I have mixed feelings about these brownies. I was really excited because I love butterscotch, and the marshmallow part sounded interesting...these had an okay flavor, but no one in our family really cared for them too much. The marshmallows did not 'mix in' like some people said it did for them...they left a strange marshmallow 'shell' on top of the brownies, and when I bit into it, expecting an actual marshmallow- it was just a browned 'shell' where the marshmallow had been. That was kind of weird...and because of it, they didn't exactly LOOK very appealing. But, overall- they were just okay. I probably won't make them again.

Spaghetti Pie III

Reviewed: Jun. 15, 2010
I was hoping for the taste of the spaghetti pie my mom used to make, but was rather disappointed. Next time I would either add more salt, or use a premade spaghetti sauce. I also would have used more cottage cheese- only using 1 cup was just not enough. The cottage cheese really makes this dish, and not having enough made it taste like very plain spaghetti.
