Quinoa Vegetable Medley

I omitted the mushrooms because I don't care for them, and followed the advice of another reviewer and let the quinoa cook about half way before adding the veggies to avoid over-cooking. Also, waited until the end to add the spinach. I added some halved cherry tomatoes and a dash of cumin as well for a little more color and flavor. Excellent recipe!

Spicy Sausage Pasta Alfredo

This was fantastic! I had a few modifications: first, I didn't have Italian sausage on hand, so I used smoked turkey sausage instead and added my own Italian seasonings. And I don't like mushrooms so I left those out and added chopped onion. I will definitely make this again!

Braised Balsamic Chicken

I took the advice of some other posters and cooked this in the crock pot, with 1/4 c. balsamic and 1/4 c. chicken stock. I also used fresh tomato instead of canned. It came out really good, but next time I think I will use the full 1/2 c. balsamic.

Easy Spicy Chicken and Rice

I thought this dish was great! Some users said to use instant rice, but I disagree; instant is too starchy and if you cook it in the oven for 45-50 minutes it comes out fine. I did add 1/4c. chicken broth and some frozen broccoli, and it made a whole meal. Very good!

Beefy Barbecue Macaroni

This recipe was fast, easy, and very tasty! I took the advice of some other reviewers and used a full pound of beef and a whole cup of barbecue sauce. I like mine spicy, so I also added a bit more cayenne pepper. Definitely a crowd pleaser!
