Chewy Cocoa Brownies

Not the texture I was looking for. Too cake-like, not quite enough chocolate flavor. Will do in a pinch, I guess, when you're short on ingredients... probably won't make these again.

No-Bake Peanut Butter Cookies III

This recipe is excellent. I made no adjustments to the ingredients. (Word of warning -- no bakes can be finicky, alter recipes at your own risk because they may not set up correctly!) The one review I read that said they were too sweet -- I don't think so. There are a lot of things I won't eat because they are too sweet or too rich, and these aren't. It comes together easily and they set up quickly. Make sure you melt your butter before adding the milk and sugar, bring it to a boil over medium high heat and turn it down to medium when you get it to a full rolling boil, stirring constantly for 1 to 1 1/2 minutes. Using a whisk is best for stirring while boiling and for mixing in the peanut butter, then use a large spoon for mixing in the oatmeal. Allow to set up and cool, then enjoy.

No Bake Chocolate Peanut Butter Cookies

Just made this recipe. They are rich and chocolaty with a nice hint of peanut butter. They come together easily and set up quickly. Will definitely make this again... it will become my go-to no-bake chocolate cookie recipe.

Dad's Pan-Fried Green Beans

I just finished making this recipe. I didn't use sesame oil because I didn't have any... so I used EVOO instead and I think the recipe is wonderful. A refreshing change for green beans without being overpowering. If I get the sesame oil, I'll try this recipe again that way and update this review. Will definitely be making these again!

Tammys Spanish Rice Recipe

This is an easy recipe to throw together for a good hearty family meal. All of my kids love it. For younger children, you might just use a can of petite diced tomatoes instead of Rotel tomatoes.

Hot Pizza Dip

Made this the same night we made the Jalapeno popper dip. I am in LOVE with this dip. It comes together easily and it has an awesome flavor. A hit with the kids and adults alike! This would be perfect for teenagers. No fuss... Leftovers are awesome, too!

Jalapeno Popper Spread

Brought this dip to a get together with good friends. It was a hit. Glad we doubled the recipe because we could take the extras to a couple who couldn't be there. Everyone loved it and everyone wanted the recipe! Easy to make.

Crispy Chicken Strips

This was quick and easy to prepare. The chicken was moist while the coating was crunchy without being too "hard". I didn't have the salt-fee seasoning blend, so I used rotisserie chicken seasoning instead, and used Italian flavored planko bread crumbs instead of cereal (because I didn't have rice cereal, either). Everyone loved it. Will definitely make this again. Thanks for the recipe!

Bebop Baked Beans

My husband absolutely loves this recipe for baked beans. I have a jar of bacon grease in the fridge that I use (just enough to saute the peppers), rather than adding actual bacon (only because it tends to get soggy -- which is unappealing to our family). Otherwise, I give this recipe 5 stars for ease of prep and overall taste. Letting these beans sit uncovered for a while after baking helps them thicken up so they aren't running all over your plate.

Delicious Ham and Potato Soup

I made this the week after Christmas with some leftover ham. The entire family loved it. It's fairly simple to make and the flavor is out of this world. I didn't have any celery (because I'd used it over Christmas), so I ended up shredding carrots and added them instead. I'm impressed... will definitely make it again. Frozen leftovers reheat easily and don't taste too bad.

Simple BBQ Sauce

I made this one night because I was in a pinch for some bbq sauce for the brisket. It's simple to make and is easily adjusted to fit your tastes. I followed the review of someone else who mentioned adding hickory bbq sauce to it (but only after i tasted the original). Just stirred in enough to make it to my liking. You can adjust the amt of sugar, and Worcestershire sauce, to suit your tastes. I inadvertently dumped the whole packet of dry soup mix in, so I had to double the recipe... i froze the extra in a mayonnaise jar. Haven't used it yet to see how it fared after freezing. Will update this review when I find out.

Pumpkin Cheesecake Bars

We absolutely love this recipe. I don't like cheesecake, but this is awesome. i can't even count the number of times we've made it. The crust is much better than traditional "pie crust" or "graham cracker crust", and it's thick enough to support the weight of the bar. The texture of the pumpkin/cheesecake filling is thick and smooth. It's very easy to put together, and bakes evenly. it's hard to wait for it to cool down to eat it. In a nutshell, it's simply delightful. Always a hit at pot lucks and family get togethers.

Skillet Pork Chops with Potatoes and Onion

We just got done eating this meal. I was concerned about the parmesan cheese, and was a little worried that the amount of bouillon was too much for the amt of water, so I used 2 instead. Also, I didn't have any onions, so I used some onion powder. I gave it 4 stars based on the recipe as written, I think having onions would have been much better, and I really should have added all the bouillon. The chops turned out tender with a very tasty, crispy bottom. The potatoes were evenly cooked and the sauce wasn't overpowering. Once you have everything put together in the pan, put the lid on, don't stir or turn it. Will definitely make this again... this time following the recipe exactly as written... once I get some onions. ;)

Sopapilla Cheesecake Dessert

Made this for the first time today. Followed the directions exactly. Turned out excellent. Husband loves cheesecake, and this item is no exception. He's not a fan of the almonds, but ate it anyway... almonds and all. :) We sampled it, not wanting to take something that didn't turn out well to our church potluck tomorrow. Hubby's response, "You might need to leave that here because it might make everyone at church sick," which he followed up with a big grin meaning he really, really, REALLY liked it. Next time I make it, I might have to add an egg to the cream cheese mixture as another reader suggested, to see what that does to the texture/consistency.

I followed the recipe exactly as given. The cookies turned out moist and chewy with a great flavor. I baked the first pan for 10 minutes, subsequent pans were baked for 12 minutes. This yielded sturdier cookies that were still moist, chewy and flavorful. The only thing that kept me from giving this recipe 5 stars is that they cookies were a little flatter (once cooled) than I was looking for. The cookies turned out excellent. I will be making this recipe again, but may experiment with the chips, adding nuts, etc.
