Sunshine S'more Cupcakes

These are the best cupcakes. I've made them 3 times already and everyone loved them. For the lady who said the marshmallow stuck to the pan, I always took the cupcakes out of the pan before putting the marshmallow on them. It's not necessary to put them back in the oven as the marshmallow will melt overnight anyway. Plus, you don't have to put so much graham cracker crumbs all over. These were hard to make the first time, but after 3 times, it's a lot quicker. They are messy so plan to have plenty of napkins around!!

Holiday Snickerdoodles (Cookie Mix)

Yummy and Easy. The only thing I didn't use was the frosting decoration. Instead I sprinkled them with colored sugar at the end.

Chicken Enchiladas V

The recipe, as is, would be bland. I used one can of Enchilada sauce along with the cream of chicken. Next time I think we will use no cream of chicken and either use 2 cans of Enchilda sauce or 1 can of enchilda sauce and 1 can of something like Fiesta cheese. I didn't change anything else. It was very easy to make! I made 4 with real chicken and 4 with veggie chicken (morningstar) all in the same pan. My husband LOVED it but agreed it needed a little extra zing.

Caramel Brownies III

These were so yummy! I put a few extra chocolate chips because I had some gaps and figured - who doesn't love extra chocolate chips! Some tips: - Prepare cake mix first and put in pan, but don't cook just yet. Caramel takes forever to melt! Put cake in when caramel is about 10 minutes from melted b/c if caramel sits too long I found it starts to harden. - Refrigerate before cutting as per directions. They will still be gooey but will cut easily. Just be careful when transporting them to a plate. - Serve warm with a scoop of vanilla ice cream.

Chicken and Potato Parcels

This is a great template for any mix of veggies / sauce and chicken. I didn't peel the potatoes, we like the peels. I did pre-cook my potatoes in the microwave for 5 mins with a little water per another review. Then we foiled a cookie sheet and cooked it in the oven @ 350 for 1 hour. It came out perfect and was easier than making packets. I can see us adding in different veggies or trying different sauces but over all it was easy! We used Sweet Baby Rays and it was mmm mmm good :)

Oven Roasted Potatoes

I followed the recipe exactly except I left the skin on the potatoes. I used 4.5 potatoes just to be sure I had enough. When I mixed the spices/oil together at first it didn't look like there would be enough, but once I mixed in the potatoes it spread over them all well. It was even actually a little bit two spicy so I would use maybe a fraction less of each next time. When I went to turn them, they stuck to the pan a bit making me wonder if I should have used a little more oil. They tasted great and otherwise were very easy! I will make them again :)

Perfect Pumpkin Pie

This Pumpkin Pie was awesome! I used a Ready-made graham crust as many have suggested. Make sure to cook it the full time. My first pie looked a little brown so I cooked the second pie for 10 minutes less. It turned out the first pie was perfect and the second pie was runny. It's not gonna burn so cook it the full time!!

Cheddar Baked Chicken

I give it 4 stars because I changed a few things and I don't like when people give 5 stars after making changes! I left out the cereal because that didn't appeal to us. Instead I used A LOT more cheese (around 2 cups) and slightly more breadcrumbs to coat the chicken. It causes messy fingers when making but it comes together real quick and easily. We followed the recipe exactly otherwise. I prepared a few hours early and put it in the fridge until time to bake. I used one Quorn veggie "Chick'n" for me and just placed it in the center with the real chicken surrounding it. I loved my veggie chicken. My husband and friends said the real chicken was yummy, flavorful, and juicy. They loved it too. Serve with any kind of rice, veggies, and biscuits!

Pasta e Fagioli

I gave this 5 stars only because this recipe is easy to customize based on what you already have. It's a flexible recipe that will be good even if you don't follow the exact measurements. I didn't have everything, so here is how I customized it. If you don't have Italian seasoning, you can instead use equal parts of basil, marjoram, oregano, rosemary and thyme. I didn't have rosemary but had all the others. I used 14.5 oz can chicken broth plus a little water since I didn't have 2 cups. I had a can of diced tomatoes with jalapeno's so I used that to make it nice and spicy! Finally, I used fresh cooked red kidney beans which is the reason I tried the recipe in the first place. A good recipe for using up left over veggies.

White Chocolate Amaretto Cake

This is good but not awesome. I made this for valentine's day and I enjoyed it, but I did find myself eating most of it as my husband only had one slice. We ended up throwing some away. Next time I think I'd make it half the size, just one round, as 2 rounds was too much for us.

Blonde Brownies I

These were very good! I made them because my I am not a huge fan of chocolate and I love white chocolate flavored things. I followed the recipe exactly and my family loved it. They did suggest that next time I mix chocolate chips into the batter instead of just putting them on top. I liked it as is, and would also like it with the chocolate chips mixed in. Either way, it was excellent! I would like to try the other users suggestion to double the recipe and make it in a 9x13 pan. One batch just wasn't enough since they were SO good!!!

Banana Crumb Muffins

Yummy! I folled another users advice and added a tsp of cinammon to the batter so the whole muffin had a little cinammon taste. I don't have anything to really mash the bananas, so I instead cut them and then just beat them up with spoon as best I could. This meant there were chunks of banana in the muffin which I really enjoyed.

Easy Salmon

Really easy and really good. I put shredded cheese on it like other people suggested. I don't like mushrooms but I used some green peppers. Cooked a little longer than suggested, just because I like it cooked thouroughly. Served with rice and veggies!

Garlic Butter Sauce I

It was alright but seemed like too much garlic. Next time I would just use garlic powder and just sprinkle a little bit to give it flavor without overwhelming it. I followed a users suggestion and added milk and flour until it was a little creamy. This also helped to stretch the recipe to make about 4 servings.

Eclair Cake

I forgot the milk! Which meant it was very sticky and hard to spread. However, it still turned out very good :) Next time I will remember the milk and hopefully it will be easier to spread. I used extra creamy cool whip topping and 3/4 of a can of milk chocolate frosting.
