amazing! even better than an actual baked potato. i followed the recipe pretty closely except i boiled my potatoes in my chicken broth (as i didn't have leftover baked potatoes) while i sauteed the bacon, onions, and garlic. then i set that aside and made the rue which i then added straight to the potato/broth pot and mixed (which gently mashed some of my potato chunks but i didn't mind) then i added the spices (using only half a tsp of basil as noted by other reviewers) and half & half and boiled. once boiled i added the sauteed stuff (including the bacon) and a handful of shredded cheese mixture (cheddar, mozza, and parmesean) and mixed. served with a dollop of sour cream on top of each bowl, which totally makes it most like a baked potato when you eat each bite of soup with a bit of sour cream on it! mmmmmmm!
