Best White Icing Ever

worked well to ice my mini cupcakes although i did alter the recipe - i used half shortening and half unsalted butter and instead of water/corn syrup i used milk. very yummy:)

Baked Potato Soup

amazing! even better than an actual baked potato. i followed the recipe pretty closely except i boiled my potatoes in my chicken broth (as i didn't have leftover baked potatoes) while i sauteed the bacon, onions, and garlic. then i set that aside and made the rue which i then added straight to the potato/broth pot and mixed (which gently mashed some of my potato chunks but i didn't mind) then i added the spices (using only half a tsp of basil as noted by other reviewers) and half & half and boiled. once boiled i added the sauteed stuff (including the bacon) and a handful of shredded cheese mixture (cheddar, mozza, and parmesean) and mixed. served with a dollop of sour cream on top of each bowl, which totally makes it most like a baked potato when you eat each bite of soup with a bit of sour cream on it! mmmmmmm!

Roasted Sweet Potatoes & Onions

amazing! i made this as a side dish to a pork roast i made for dinner tonight and everyone loved it! i added about 2 tbsp of brown sugar when i tossed it just because i do like them sweeter. i also served them with a dip made of 5 tbsp sour cream and 1/4 tsp of chipotle powder which was a delicious combo but they were definitely amazing without it. mmmmmm!

Empire Cookies

these are my favourite cookies of all time. this recipe doesn't exactly match the ones i remember getting from the mom & pop bakery in my hometown but they're pretty close. i think the brand of jam would make all the difference. the reason i gave them 4 out of 5 is that the dough was too dry to roll out and kept cracking so i had to add an extra egg (i doubled the recipe so a whole egg would probably be too much extra moisture for a single batch). otherwise, very tasty and satisfying!

these are super tasty. i made mine too big as i usually do. they're still good but i prefer them to be one-bites instead of 2-bites. just a tip - keep these in the fridge or they'll just taste like a spoon-full of peanut butter.

Sturdy Whipped Cream Frosting

this had great taste but it definitely didn't hold like the picture shows. it may have been due to the cream i bought - whipping cream 35% - but that was the highest b.f percentage of cream i could find and i went to 3 different grocery stores. it got sort of sturdy but by the next day it was a runny mess. again, still tasted good, just was more of a glaze than a frosting.

Sweetheart Cupcakes

these worked out great. i wanted to make 24 cupcakes but ran out of batter by about cupcake #12 so if you want a full batch make sure to use 2 packages of cake mix which will give you about 27 cupcakes in total.

White Chocolate Pumpkin Cookies

these are good but nothing spectacular. i followed the recipe exactly except that i doubled the amount of spice and they still taste pretty bland. something seems to be missing from them but i can't figure out what. i baked them at 350 for 15 mins and they turned out fine.

Vegan Chocolate Cake

this was awesome. i made these as cupcakes for a vegan friend of mine and he loved them (and so did my non-vegan roommate!). i baked these as 12 large cupcakes at 350 for 20 minutes but i think i could have even baked them for a couple minutes less. i iced them with vegan buttercream and they were very tasty!

Special Hamburger Sauce

yup, tastes like mac sauce. i think i ended up adding a little extra sugar because i prefer mine sweeter and i didn't have dried onion so i used 1/2 tsp of minced fresh red onion. made this for a barbeque and everyone loved it on their burgers and hot dogs. will definitely make this again!

Apple Brownies

these were very tasty and extremely moist! i also would not call them "brownies" - more of a cake in my opinion, but delicious nonetheless. i used red delicious apples but would use granny smith next time as i think the tartness would be better to cut the sweet. i doubled the recipe so i had to bake it for about and hour and 15 minutes (in a glass 9x13 baking dish) and it looked dark on the outside but came out perfect. also, i didn't have nuts so i subbed in skor toffee bits and also topped it with them. mmmmm.

Banana Cake VI

yum! the only change i made was that i added a tsp of cinnamon to the batter before baking and topped the icing with chopped pecans before serving. if you don't have buttermilk on hand you can put 6 tsp of vinegar or lemon juice in the milk to thicken it like buttermilk - it works perfectly.

Strawberry Coffee Cake

easy and delicious! i doubled my recipe and made it into muffins (although the doubled topping was a little much, maybe it should only be increased by 1.5) and added a bit of cinnamon to both the batter and the topping. would definitely make this again. also, i used strawberries that i had frozen. i let them thaw first and then drained them and it worked perfectly.

Fresh Southern Peach Cobbler

yum! this was my first cobbler ever and it was easy and tastes amazing! i did have to use nectarines instead of peaches (because that's what i had on hand) and i can only imagine it's even tastier with the peaches. as other reviewers suggested, i shortened the topping baking time (i did 20 mins). next time i will take other reviewers' advice and make more topping because the topping is amazing and i want more of it! but the recipe as it is is awesome! p.s another reviewer suggested boiling the fruit first to make the skin slip off and it worked like a charm! thanks!
