these are super tasty. i made mine too big as i usually do. they're still good but i prefer them to be one-bites instead of 2-bites. just a tip - keep these in the fridge or they'll just taste like a spoon-full of peanut butter.

Empire Cookies

these are my favourite cookies of all time. this recipe doesn't exactly match the ones i remember getting from the mom & pop bakery in my hometown but they're pretty close. i think the brand of jam would make all the difference. the reason i gave them 4 out of 5 is that the dough was too dry to roll out and kept cracking so i had to add an extra egg (i doubled the recipe so a whole egg would probably be too much extra moisture for a single batch). otherwise, very tasty and satisfying!

Roasted Sweet Potatoes & Onions

amazing! i made this as a side dish to a pork roast i made for dinner tonight and everyone loved it! i added about 2 tbsp of brown sugar when i tossed it just because i do like them sweeter. i also served them with a dip made of 5 tbsp sour cream and 1/4 tsp of chipotle powder which was a delicious combo but they were definitely amazing without it. mmmmmm!

Baked Potato Soup

amazing! even better than an actual baked potato. i followed the recipe pretty closely except i boiled my potatoes in my chicken broth (as i didn't have leftover baked potatoes) while i sauteed the bacon, onions, and garlic. then i set that aside and made the rue which i then added straight to the potato/broth pot and mixed (which gently mashed some of my potato chunks but i didn't mind) then i added the spices (using only half a tsp of basil as noted by other reviewers) and half & half and boiled. once boiled i added the sauteed stuff (including the bacon) and a handful of shredded cheese mixture (cheddar, mozza, and parmesean) and mixed. served with a dollop of sour cream on top of each bowl, which totally makes it most like a baked potato when you eat each bite of soup with a bit of sour cream on it! mmmmmmm!

Best White Icing Ever

worked well to ice my mini cupcakes although i did alter the recipe - i used half shortening and half unsalted butter and instead of water/corn syrup i used milk. very yummy:)
