Amazing Pecan Coffee Cake

This is a tasty coffee cake for sure. I made about 50% more of the topping because I wanted to put it in the middle as well as on the top. Baked mine in two loaf pans and they had to bake for about 10-15 minutes longer. I didn't use the foil because I didn't read that part of the instructions but I don't see the point of it. Used Wilton cake release and it came out no problem.

Chewy Peanut Butter Chocolate Chip Cookies

these are edible and slightly chewy but i found them dry and bland. i think the baking time could be reduced quite a bit. definitely would not make these again.

Best Ever Banana Bread

this is moist and dense and delicious! i used chocolate chips instead of pecans and found that my loaves (i made 2 out of this recipe) stuck to the bottom of the pans even with spraying them first. i would recommend flouring them as well. also, i only baked mine for about an hour and they were baked perfectly.

Basic Buttermilk Muffins

These were moist and delicious. I found the batter way too stiff until I added the fruit but after that it looked more like muffin batter and less like cookie dough. I would recommend watching the time as I left them in for only 16 minutes and they were still a little overdone. I added almond extract and cherry preserves and topped with sliced almonds.

Chef John's Buttermilk Fried Chicken

i made this according to recipe and the chicken was tender and juicy inside and crispy on the outside however i used a thermometer the whole time and the breading still got way too dark too fast. i stopped frying it after 15 minutes because it was burning. luckily i had only used thighs so they were cooked in that time. i think next time i would try it at a lower temperature or maybe use boneless meat to cut down the cook time.

Raisin Tea Biscuits

These are okay. They weren't sweet enough for my taste (and I had already added extra sugar). They also didn't get very light and fluffy like some other reviewers said they did. They're not bad, just not what I'm looking for.

Fresh Southern Peach Cobbler

yum! this was my first cobbler ever and it was easy and tastes amazing! i did have to use nectarines instead of peaches (because that's what i had on hand) and i can only imagine it's even tastier with the peaches. as other reviewers suggested, i shortened the topping baking time (i did 20 mins). next time i will take other reviewers' advice and make more topping because the topping is amazing and i want more of it! but the recipe as it is is awesome! p.s another reviewer suggested boiling the fruit first to make the skin slip off and it worked like a charm! thanks!

Strawberry Coffee Cake

easy and delicious! i doubled my recipe and made it into muffins (although the doubled topping was a little much, maybe it should only be increased by 1.5) and added a bit of cinnamon to both the batter and the topping. would definitely make this again. also, i used strawberries that i had frozen. i let them thaw first and then drained them and it worked perfectly.

Banana Cake VI

yum! the only change i made was that i added a tsp of cinnamon to the batter before baking and topped the icing with chopped pecans before serving. if you don't have buttermilk on hand you can put 6 tsp of vinegar or lemon juice in the milk to thicken it like buttermilk - it works perfectly.

Apple Brownies

these were very tasty and extremely moist! i also would not call them "brownies" - more of a cake in my opinion, but delicious nonetheless. i used red delicious apples but would use granny smith next time as i think the tartness would be better to cut the sweet. i doubled the recipe so i had to bake it for about and hour and 15 minutes (in a glass 9x13 baking dish) and it looked dark on the outside but came out perfect. also, i didn't have nuts so i subbed in skor toffee bits and also topped it with them. mmmmm.

Special Hamburger Sauce

yup, tastes like mac sauce. i think i ended up adding a little extra sugar because i prefer mine sweeter and i didn't have dried onion so i used 1/2 tsp of minced fresh red onion. made this for a barbeque and everyone loved it on their burgers and hot dogs. will definitely make this again!

Vegan Chocolate Cake

this was awesome. i made these as cupcakes for a vegan friend of mine and he loved them (and so did my non-vegan roommate!). i baked these as 12 large cupcakes at 350 for 20 minutes but i think i could have even baked them for a couple minutes less. i iced them with vegan buttercream and they were very tasty!

these are good but nothing spectacular. i followed the recipe exactly except that i doubled the amount of spice and they still taste pretty bland. something seems to be missing from them but i can't figure out what. i baked them at 350 for 15 mins and they turned out fine.

Sweetheart Cupcakes

these worked out great. i wanted to make 24 cupcakes but ran out of batter by about cupcake #12 so if you want a full batch make sure to use 2 packages of cake mix which will give you about 27 cupcakes in total.

Sturdy Whipped Cream Frosting

this had great taste but it definitely didn't hold like the picture shows. it may have been due to the cream i bought - whipping cream 35% - but that was the highest b.f percentage of cream i could find and i went to 3 different grocery stores. it got sort of sturdy but by the next day it was a runny mess. again, still tasted good, just was more of a glaze than a frosting.
