Yumm! I used leftover coconut rice (3 cups cooked short grain with 6 oz of coconut milk stirred in after cooking) so I used 1.5 cups of 1% milk and then 3/4cup of coconut milk with the egg. Yum yum yum.

Turkey Sloppy Joes

My family enjoyed this. I skipped the celery seed because I didn't have any. I found it a little vinegar heavy but it could be the bbq sauce I use also has vinegar in it. Next time I'll just skip the vinegar.

Moist Banana Muffins

I know people hate it when you rate a recipe after making dozens of changes but this was a great base recipe that I adjusted to fit the pantry! My 2yr old was asking for muffins and all I had was one frozen banana and no eggs! I halved the recipe but still needed to make up the 1/2 banana so I added some frozen strawberries and thawed and mashed them with the banana. Since they were frozen they added a bit of moisture to the recipe. I mixed them with the mayo then added the dry ingredients. When I got to the baking soda I realized I was out so I just tripled the baking powder and it worked just fine. I filled 22 mini muffins with 1/2 the recipe and baked at 350 (in a toaster oven) for 15 mins. They are SO good! I can't believe I just threw them together with what I had on hand!

Garbanzo Bean and Quinoa Salad

This is a very good introduction to quinoa, although novices should be told you need to rinse quinoa first to avoid a bitter taste. I didn't have any fresh mint, but people loved the mint so much I attempted to substitute peppermint extract (halving the recipe I used 1/2 tsp of extract) and the results were not great. It was way too minty. Next time I'll get fresh mint or leave it out completely. I also left out coriander because I didn't have any. I will make this again.

Slow Cooker Pork Chops

Like others before me I added apples and onions and this came out great. I didn't even think I liked sauerkraut so I was nervous.

Kathy's Delicious Whole Slow Cooker Chicken

I wasn't a fan. The chicken turned out very sticky chewy. It is likely because I have a small crock pot so the chicken was totally submerged in liquid and was just boiled, bleh. I won't make it again.

Butter Beef

Love it exactly as written. It is perfect served over mashed potatoes. I hate beef stew and figured I didn't like stew meat. Not true! I love this, and now make it twice a month.

Becki's Oven Barbecue Chicken

Wow so good. I was afraid of wings in the oven being too gummy but they were PERFECT. Following others recommendation, I used half the ketchup and water and the sauce was SO GOOD, not ketchup-y in the least. My husband wants me to de-skin the wings next time but I wasn't bothered by the skin.
