Vegetarian Cottage Cheese Patties

Reviewed: Jan. 18, 2013
These surprised me. I did not know what to expect but was curious enough to try it out. They kind of taste like thanksgiving stuffing. I used regular oats instead of quick oats and they were fine. I dipped in panko breadcrumbs but otherwise followed the recipe. I might use a different soup next time since cream of mushroom isn't my fav but I probably will make it again.

Easy Pierogi Casserole

Reviewed: Dec. 30, 2012
This is very good. I used chive and onion cream cheese because it was all I could find, and made my own bacon but otherwise followed the recipe as written. I didn't believe the other reviewers and didn't add salt, figuring they must just prefer salty food (we are a pretty low salt family) but I will add it to the mashed potatoes next time I make this. Sour cream helped. I will also follow another reviews advice and add onion and garlic to the mixture but leave the bacon just for the top. It looses some of its texture and taste inside the the potato but stays crispy and delicious on top. Lastly, I made this in the am and refrigerated until dinner time, from cold it needs at least an extra 10 mins in the oven.

Rainbow Cookies

Reviewed: Nov. 21, 2012
I have just finished making these for the 4th time. I figured I would share my secrets based on experience and other reviews. 1) Use most of a can of almond filling instead of almond paste. 2) add 2t of almond extract. 3) forget the egg separation part, I didn't see any difference doing it or not doing it. 4) each part is about a cup and a quarter of dough. 5) Don't skip the overnight in the fridge. 6) Don't be stingy with the raspberry preserves and apricot is unnecessary, but if you love apricot go for it. 6) After they are refrigerated I cut the whole brick in half lengthwise then cut into 1 inch bars that I cover in chocolate on four sides, and (this is key) go for the big guns and melt dove promises for this (I use about a bag and a half) it is worth the $$. I dry them on my cooling rack which creates lines perfect for cutting into individual cookies (my wires only go one direction).

Hamburger Potato Casserole

Reviewed: Nov. 17, 2012
This is a great base recipe that can handle a lot of variation. I didn't have cream of mushroom, so I used cream of chicken plus a quarter of a bag of french onion soup mix (I chickened out, it could have used much more). I used about 3 and a half medium/large Yukon gold potatoes, sliced on my mandolin to 1.5mm. It cooked perfectly in 1 hr. Like others I also browned my meat with garlic and onions. I served it with sour cream on top instead of in the sauce so people could use as much or as little as they like. It was good and simple enough to put together, I will make it again.

Creamy Rice Pudding

Reviewed: Jan. 16, 2012
Yumm! I used leftover coconut rice (3 cups cooked short grain with 6 oz of coconut milk stirred in after cooking) so I used 1.5 cups of 1% milk and then 3/4cup of coconut milk with the egg. Yum yum yum.

Turkey Sloppy Joes

Reviewed: Apr. 6, 2011
My family enjoyed this. I skipped the celery seed because I didn't have any. I found it a little vinegar heavy but it could be the bbq sauce I use also has vinegar in it. Next time I'll just skip the vinegar.

Moist Banana Muffins

Reviewed: Nov. 27, 2010
I know people hate it when you rate a recipe after making dozens of changes but this was a great base recipe that I adjusted to fit the pantry! My 2yr old was asking for muffins and all I had was one frozen banana and no eggs! I halved the recipe but still needed to make up the 1/2 banana so I added some frozen strawberries and thawed and mashed them with the banana. Since they were frozen they added a bit of moisture to the recipe. I mixed them with the mayo then added the dry ingredients. When I got to the baking soda I realized I was out so I just tripled the baking powder and it worked just fine. I filled 22 mini muffins with 1/2 the recipe and baked at 350 (in a toaster oven) for 15 mins. They are SO good! I can't believe I just threw them together with what I had on hand!

Garbanzo Bean and Quinoa Salad

Reviewed: Feb. 21, 2010
This is a very good introduction to quinoa, although novices should be told you need to rinse quinoa first to avoid a bitter taste. I didn't have any fresh mint, but people loved the mint so much I attempted to substitute peppermint extract (halving the recipe I used 1/2 tsp of extract) and the results were not great. It was way too minty. Next time I'll get fresh mint or leave it out completely. I also left out coriander because I didn't have any. I will make this again.

Slow Cooker Pork Chops

Reviewed: Dec. 18, 2009
Like others before me I added apples and onions and this came out great. I didn't even think I liked sauerkraut so I was nervous.

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Dec. 18, 2009
I wasn't a fan. The chicken turned out very sticky chewy. It is likely because I have a small crock pot so the chicken was totally submerged in liquid and was just boiled, bleh. I won't make it again.

Butter Beef

Reviewed: Dec. 18, 2009
Love it exactly as written. It is perfect served over mashed potatoes. I hate beef stew and figured I didn't like stew meat. Not true! I love this, and now make it twice a month.

Becki's Oven Barbecue Chicken

Reviewed: Oct. 4, 2009
Wow so good. I was afraid of wings in the oven being too gummy but they were PERFECT. Following others recommendation, I used half the ketchup and water and the sauce was SO GOOD, not ketchup-y in the least. My husband wants me to de-skin the wings next time but I wasn't bothered by the skin.
