Favorite Old Fashioned Gingerbread

Followed the recipe exactly and as another reviewer stated, I started checking at 45 minutes and mine was ready after about 50 minutes. It is very moist with great flavor. Now I know that gingerbread isn't about ginger, it is about molasses!

Figs and Toasted Almonds Brie

Delicious. I recommend cutting all the rind off the top of the brie before pouring on the sauce. I used slivered almonds and chopped the figs.

Pizza Dough III

Cook at 400 degrees and pre-heat the pizza stone. Use corn meal to keep from sticking. Other changes: used 3/4 cup water and added 1 tsp garlic powder, 1 tsp thyme and 2 tsps of italian seasoning as suggested by another. Delicious!!

Authentic Louisiana Red Beans and Rice

I soaked 2 pounds of beans overnight, thinking I wanted mine to be more BEANY than sausage. I ended up using only 1.5 pounds as that is all my dutch oven would hold! I cooked the vegetables in my Lodge dutch oven with some olive oil (not 1/4 cup) and then added the beans, water and spices. I also added a ham bone. Before adding the sausage I thought it needed salt, but I waited, and I am glad I did. By the end, I thought the flavor was perfect and no salt was needed.

Pineapple Pie III

I made this for my dad and he loved it! I used a store bought crust that comes in the pan for the bottom crust and a refrigerated crust for the top crust. Very easy recipe and very tasty.

Banana Banana Bread

The simplest, best recipe for banana bread. I used 5 bananas, lightly "squished" with a fork, and stirred gently (more like "folded" than stirred). I added about 1/3 cup walnuts. Great bread and lots of compliments from coworkers!

Southern as You Can Get Collard Greens

Excellent! Not bitter at all! I made this recipe at the last minute, so I did not have the ham hocks so I used two slices of bacon. I also threw in a tablespoon of honey, red pepper flakes, onion bits and a couple sprigs of thyme. VERY good. I am no longer afraid of this vegetable!

Mom's Zucchini Bread

SO GOOD! My coworkers loved this. It makes a great "crunchy on the outside, moist on the inside" bread. Only substituions I did was add 1 banana and used 2 cups all purpose flour and 1 cup wheat flour.

Toffee Caramel Squares

I won a cookie exchange with this today. As others stated, I doubled the filling and put in a 9 x 13 pan. I let the caramel cool just a couple of minutes and then poured the chocolate chips on top. After a few minutes they melted and I spread them. I put in the refrigerator an hour and then cut and put back in the refrigerator overnight. They are very rich, so small pieces are perfect.

Chicken Tortilla Soup I

Very good soup. I like to make it for the Super Bowl and keep in a crock pot and any left overs I freeze for future lunches! I use 2 cans of corn (or frozen) rather than hominy and diced tomatoes rather than crushed. The cilantro makes it taste so fresh. I also grill the chicken and shred it rather than cut up.

Chocolate Toffee Crunchies

I have made these twice for Christmas cookie exchanges and won first place both times!! Secret is to use parchment paper in the pan. Also, I let it set overnight in the fridge before cutting. I would not recommend doubling because then the crust may be too thick or thin. Make one batch after the other. Also, you can grind up the cookies in a blender if you do not have a processor

Super-Delicious Zuppa Toscana

Wonderful recipe! My changes: left out bacon, used half and half rather than cream, used kale rather than spinach (and a lot of it!!), used fat free chicken broth and added a little salt. Very good!
