Chex® Muddy Buddies® -- Gluten Free!

Do not make this recipe if you are not willing to accept that you will probably eat it all and gain 50lbs. I followed it exactly except that I only had crunchy peanut butter on hand. Turned out perfectly fine!! So delicious. I'm not sure the vanilla is totally necessary since it seems to be an outstanding flavor in this, but its not so overwhelming that you can't devour it. Yum Yum!

Original Chex® Party Mix

Just made three batches of this to put in Christmas gift baskets. It was actually my first time making Chex mix! Please read the following sentence carefully: DOUBLE THE SEASONINGS. DO IT. I'm not joking. The original recipe is SO bland by itself. I took other's suggestions and doubled all the spices except the butter. Then made it according to the recipe. I made it as is the first time and was VERY disappointed with the lack of flavor. I added more seasoning salt to it which helped, but the second time i doubled it and it was much much better. Otherwise definitely a classic!

No Bake Peanut Butter Pie

This is DELICIOUS! I used about 1/2 cup extra of peanut butter, and the smaller size container of cool whip. I used two store bought chocolate graham cracker crusts. I also crushed up some oreos and sprinkled them on top before freezing! SO GOOD! If you LOVE peanut butter (like I do) this is totally the perfect dessert!

S'mores

If you're craving s'mores but can't or don't want to make them the traditional way, THIS is the way to do it! I accidentally only used 1/2 of melted butter for the crust so it was much more crumbly than actually crust but it's still REALLY Good. So, if you're looking to cut back on the butter you can do that, you just wont be able to cut it into bars later. I served it straight out of the oven and it is melty and delicious!(and MOLTEN hot haha) I used hershey bars instead of chocolate chips for that real s'mores flavor. It took about 8 normal sized hershey bars. It's delicious! If you're crushing the graham crackers yourself, it's almost all of an averaged sized box (3 pkgs inside the box).

Banana Nut Frosting

This was even more amazing than I thought it was going to be. I only used half of the amount of powdered sugar since the banana cupcakes I was putting it on were plenty sweet. I also used walnuts instead because I prefer them. DEFINATELY toast the coconut and the nuts before you add them it! It adds the best flavor! Be careful not to whip it too much because the banana starts to separate from the butter. To solve this I threw the nuts and coconut in while they were still warm, which melted it all back together. Then I put it in the fridge until it cooled down and was a spreadable consistancy. I frosted 22 cupcakes and still had some leftover.

Fluffy Peanut Butter Frosting

YUM!!! I am a peanutbutter FANATIC and this was AMAZING. Perfect blend of sweetness and peanut butter flavor. I used it as one of three different frostings I used on banana cupcakes (recipe also from this site YUM). I had enough to frost 22 cupcakes and I have half of it left! Brownies here I come! (or i might just eat it with a spoon)

Basic Cream Cheese Frosting

This is one of three different frostings I used on some banana cupcakes that I made for a luau. I only used 2 C of powdered sugar and it was PLENTY sweet, I can't imagine how four cups would have tasted. I also melted 2/3 cup semi-sweet chocolate chips and folded it in to make Chocolate cream cheese frosting! Delicious and easy! I frosted 22 cupcakes and had plenty left over.

Banana Cupcakes

These cupcakes are AMAZING. I'm baking them for my manager's son's 2nd birthday party tomorrow and I'm already so excited about them! I baked my first batch and they taste AMAZING. The only changes I made were using butter instead of shortening and milk instead of buttermilk (didn't have either on hand). I also added just a tiny splash of lemon extract for a little extra umph! It only took them about 13 minutes to bake in my 350 degree oven, so make sure you watch them closely! THEY ARE SO GOOD! Perfect blend of sweetness and banana flavor. I haven't even tried frosting on them and I'm already in love. I plan on using the banana coconut frosting from this website (it's like a banana flavored version of what goes in german chocolate cake) I'll let you know how it goes! **Update 6/20** I ended up baking three batches of these cupcakes for the party coming out with about 70 total (i got a good 24 out each batch as oppposed to the 18 it says). I decided to use three different frostings to give people a choice: Chocolate cream cheese, peanut butter, and Banana nut frosting (all from this website)

Peanut Butter Cupcakes

Being the peanut butter lover that I am, I couldn't pass up trying to make this recipe. It was DELICIOUS! I made a couple changes to the recipe. I used 1/2 Cup of vegetable oil instead of shortening and used all natural peanut butter as reccomended. They came out really moist and had a great peanut butter flavor. To top it off I made a chocolate ganache recipe from this website. Yum Yum Yum! I will definately be making this again!
