Farmer's Market Vegetarian Quesadillas

Reviewed: Jul. 28, 2012
These quesadillas are really delicious. I followed the recipe exactly, though I did add a clove of garlic because I LOVE it. Also, I don't ever use cooking spray when making my quesadillas, I personally find that a dry skillet works best. Baked Tofu Bites

Reviewed: May 4, 2012
I thought this recipe was wonderful and I followed it *almost* to the T. The only changes I made are that I left out the liquid smoke, because I didn't have any, I baked it for 40 minutes instead of 30, and used reduced sodium soy sauce instead of regular. That being said, I found the dish to be VERY salty. Next time I make it (there will be a next time) I will use only 2 tablespoons of soy sauce. Also, be sure that you dry your tofu very well before you soak it in the marinade. (I went through several kitchen towels) Also, if time allows, let your marinade soak a little longer. It will still taste great if you cannot, but the flavors will intensify, even if it sits for only 15 minutes or so. Give it a try, you'll be pleased!

Old Fashioned Rice Pudding

Reviewed: Sep. 8, 2011
This recipe is FANTASTIC! I love that you don't have to use eggs in it, and that it is also very flexible with dietary restrictions. I am lactose intolerant, so I wanted to write a review to let others know that I substituted vanilla flavored ALMOND milk (the kind by Almond Breeze) and it was delicious. Similarly, I used Splenda in place of the sugar and enjoyed the taste very much. Mine was ready in 45 minutes rather than 60, and perhaps this was due to the almond milk, but either way, this was a huge hit. I am going to make more again tomorrow as this batch is already gone! Thanks for a great recipe Sandra!

Homemade Marshmallows I

Reviewed: Jul. 20, 2011
I'm sure this would work and taste great if followed properly. That said, I tried making them with Splenda. NOT a success. The marshmallows did not set up properly. Follow the recipe right and they'll be great.

BLT Pizza

Reviewed: Oct. 30, 2010
This pizza is FANTASTIC! I made my own pizza dough, doubled the tomato and used turkey bacon in place of regular. I also sprinkled a little garlic powder on the crust itself and again into the mayo with the salt and pepper. Thank you so much Amyame, this will definitely go on the rotation!!

Mac's Shoe-Fly Bread

Reviewed: Oct. 26, 2010
This bread it fantastic and it rose beautifully! I altered it a bit by adding only 2 TBLS of molasses (it was all I had left) and I used 1 TBLS brown sugar to help add more flavor due to my lack of molasses. Finally, I left out the last addition of oats. Despite all of my alterations, this made a beautiful loaf. Also, I only made the dough in my machine and baked it in a regular loaf pan in the oven so its perfect for sandwiches. Yum! Thanks McReynolds!

Pat's Cream of Potato Soup

Reviewed: Oct. 18, 2010
This recipe is AMAZING! I followed the recipe fairly closely, however I omitted the bacon, cooked the onions in a Tbls. of butter and used 2% evaporated milk instead of half and half to make it a bit healthier. Also, I only had a package of garlic and chive instant potatoes on hand, but it was delish! Thanks for this wonderful recipe, it will certainly be a regular at our house!

Bread Machine Bagels

Reviewed: May 16, 2010
This recipe is phenomenal! I did not change a thing and used a cinnamon and sugar topping. They are also delicious plain without any topping at all, I like to use plain ones to make "bagel shop" style sandwiches. No need to go to the bakery any more. These are the best! While it seems like the process will be a lot of work, it is quite easy and is well worth it!

Spinach and Sun-Dried Tomato Pasta

Reviewed: Feb. 20, 2010
This was DELISH! I just finished dinner and both my boyfriend and I ate the whole dish. I followed the recipe exactly except used chicken stock in place of vegetable. It was VERY flavorful. I had read previous reviews saying that the dish was bland and needed salt and pepper, so I added some salt. Next time I will NOT add salt because it would have been perfect without it, it was a little too salty with the extra. Thanks for such a wonderful recipe!

Quick and Almost-Professional Buttercream Icing

Reviewed: Oct. 31, 2009
This was fantastic! I only had salted butter on hand, but it turned out great nonetheless. So smooth and creamy! I doubled the batch for 24 cupcakes and had a liberal amount for each. This recipe is a keeper! Thanks!!
