Orange Smoothie

YUM! To give it that Orange Julius frothiness, I added 1 egg white, 1 Tbsp cornstarch, and 1 Tbsp powdered coffee creamer. Sounds gross but it tasted perfect!

Grilled Broccoli

I added small bella mushrooms and asparagus on hand. I used grated Romano cheese which was a little soft so maybe mine turned out a little different. Used a grill skillet with holes in it. The cheese had a nice crunch.. Pretty good! Not sure if I'llill try again, if so will use parmesan cheese.

Marinade for Chicken

Outstanding. I only marinaded 4 boneless, skinless chicken breasts for 2 hours before grilled. Used indirect heat. These turned out so juicy and tasty, I can only imagine how good they'll taste after marinading for several hours. I cut the recipe to 8 servings, perfect for the 4 breasts. Thanks for a great recipe! Hubby LOVED it!

Rhubarb Lemonade

A nice way to use up rhubarb. Next time I will double the lemon juice to add more zing. Also next time I'll use artificial swwetener & see how that will work out. Nice pink color, almost like pink lemonade!

Favorite Strawberry Rhubarb Pie

Yummy! This was my 1st year harvesting rhubarb from our garden, and I was looking for a simple recipe. Used store bought frozen crust, and followed recipe to a T. Turned out terrific. Thank you! I plan to make this again for my DH to bring in to work.

Scrambled Egg Muffins

I think this is a good recipe to refer to, even if you don't have sausage. I have used chopped deli ham in lieu of sausage, and also have made veggie versions using chopped sweet peppers and broccoli, even feta cheese. I only use 6 eggs, which make 6 medium muffins... perfect amount to keep in the fridge for me and hubby to grab for a quick breakfast.

Jenny's Grilled Chicken Breasts

These turned out tasty and juicy! I used a tip by another reviewer and used this as a marinade (added 1/2 C olive oil) while grill warmed up, about 10 minutes. Pounded the thicker parts, and cooked using indirect heat 6-8 mins per side, then directly over coals to brown 2-3 mins per side. Super super deelish. Thanks!

Fluffy Pancakes

One batch was perfect for me & my pancake loving hubby. These were extremely light and fluffy... almost sponge-y... soaked up the butter & syrup. Did not feel overly full afterward light traditional pancakes. Will definitely make again. Only wished were crispier.

Very good! Mine took more like 50-55 mins. to achieve a nice golden roasted look. Next time I will add a little maple syrup to the oil and vinegar.

Homesteader Cornbread

Loved it! Sweet & moist... a cake-like cornbread. A perfect compliment to smokey ham hocks & beans. My husband went back for seconds, which he never does for dry, Jiffy-style cornbread. Delicious leftover, we both had a big slice with butter for breakfast. Next time I will take others' advise and switch the flour and cornmeal amounts, just to see how it turns out. For more of a savory cornbread I will reduce the sugar by 1/2... YUM!

Chewy Cocoa Brownies

Loved these brownies... not too cake-y and a good chocolate fix. Used an 8X8 glass pan and baked 40 mins. also used 1 cup Hershey's cocoa, and 1/4 cup butter plus 1/2 veg oil since I ran out of butter. I will try again following the recipe to a T... except the cocoa part, the extra 1/4 cup made it super chocolate-y. Will also add 1 cup choc chips next time.

Microwave Caramel Popcorn

LOVE this recipe, it's so quick and easy. After 4-5 times making it, I made a few changes: I used salted butter instead of margarine. I used 2 bags Orville Redenbacher Light popcorn. One minute instead of 1 mins 10 secs. After removing popcorn and shaking bag, I zap it another 30 secs-1 min for added crunch. SUPER!!! My first time making caramel corn-- my hubby and I ate a whole batch on Super Bowl Sunday, it's hard not to!
