Fabulous Wet Burritos

Growing up a restaurant close to my house served wet burritos and I haven't been able to find them since they closed. I did make a few adjustments: I used a can of black beans pureed in my food processor since I didn't have refried on hand. Added a layer of picante salsa before rolling up the meat. Omitted the can of chili without beans, also didn't have any. Put the lettuce and green onion on top after melting the cheese instead of inside so it would stay crisp. FInally, I topped it with sour cream, a lime wedge and jalapeno relish. SO GOOD.

Banana Sour Cream Bread

I decided to make this recipe because I had all the ingredients on hand to make a half batch and my bananas needed to be used. Made this two days ago and both loaves are gone, such a tragedy, it was super tasty and moist. Didn't rise very high but the flavor was on point with a dash of clove and nutmeg!

Cream Cheese Pound Cake III

Absolutely delicious! It was a little sweet, even for my sweet tooth so next time I will decrease sugar to 2 1/2 cups like other reviewers. I also added some lemon extract to for another layer of flavor. I made it last night and half of the cake is gone already!

Coconut Poke Cake

The first time I made this according to directions and it is a very good cake but the sweetened condensed milk makes the cake a little dense for me so I tried again. The second time I used a coconut supreme cake mix and mixed coconut flakes into the batter. While it was still hot I poured the cream of coconut over the cake. Once cooled I top with extra creamy cool whip and toasted coconut flakes, delish!

Eggplant Bake

My entire family loves it when I make this, People who don't like eggplant or tomatoes enjoy this! I do make a few alterations: Bread and bake the eggplant instead of frying it; saute the onions with a few minced cloves of garlic then toss the onions in pesto; use tomato basil flavored feta; omit the muenster and top with mozz instead. Delicious!

Lemon Cream Cupcakes

I made these yesterday afternoon and they are so yummy! I used part sour cream and part french vanilla yogurt since I didn't have enough sour cream. I also didn't have a lemon so I used some lemon extract instead of zest. I substituted some whole wheat flour for part of the flour called for. They turned out light, fluffy and moist! I've never had a homemade cake or cupcake turn out this good!

Dijon-Tarragon Cream Chicken

Very good recipe! I tripled the sauce recipe to serve with mashed potatoes. Also added garlic and shallots to give it a little more flavor. Making it for a dinner party this Thursday and I can't wait!

Thirty Minute Yellow Cake

The first time I tried this recipe I added an extra egg, like the reviews suggested. The cake turned out semi-fluffy with good flavor, but the layers were very thin. The next attempt I followed the recipe exactly and they turned out perfect! Light, fluffy and wonderful flavor. This recipe is a keeper!
