Beef Wellington

Reviewed: Dec. 22, 2009
ABSOLUTELY FABULOUS!! Just some tips to improve: ° There's no need to mix butter with pate. Puff pastry has enough ;-) ° Cubed mushrooms to make it easy to slice when serving. ° Don't put filet on the oven, brown it instead over a hot thick grill, making one turn only for each side. The purpose of this step is seal the juices inside the loin, should not take more than 5 minutes to avoid cooking the meat. Remove from grill, and allow to cool completely. Deglasé grill with a little red wine, reserve. ° Assemble a rack over a jelly roll pan and place the roll over to bake to prevent juices make the pastry soggy in the bottom. ° Final Note: Oven MUST be preheated before putting the roll in.

The Best Chocolate Cake You Ever Ate

Reviewed: Feb. 12, 2009
Was looking for a cake to bake on ball-shaped pan. The recipe has great reviews, the name itself is captivating, so I decided to give it a try as is, no modifications :-) First thing I noticed was that took way longer than suggested, I almost felt like will take it off the oven direct to the trash can :-( waited untill toothpick came clean (65 minutes!), it ended with a big volcano-like crest in the middle and smelled overdone... but deciden not to do the icing. Surprisingly I found a wonderful flavor an texture!!! As it was a test we didn't mind the bump and keep testing texture and flavor day after day; we have to tell that both improved over the time. So, we LIKED the cake and would love to have it among our favorite recipes... but the bump is indeed a big problem as we would have to top off almost a third of the cake to make it presentable. Anybody else has had the same "bad" experience we did, any idea on the reason why this happen? I usually use heavy molds for fancy shapes like NordicWare, was the result caused by the pan itself (Wilton's aluminum soccer ball pan)?

Perfect Flourless Orange Cake

Reviewed: Feb. 9, 2010
Delicious! If concerned of bitternes, prefer thin peel oranges and always carefully discard all white and seeds. I use 1 cup Xylitol to make a diabetic SouthBeach version and worked perfectly. Definitively not for use with elaborate bun pan, well greased plain round pan delivers the best.

OMG! Just two recomendations: use the real thing, mascarpone is waaaaay better than cream cheese, triple the coffee amount to soak ladyfingers... terrific cake

This is wonderful bread, easy to work with ;-) I made the dough on my bread machine and came out perfect, added a little more flour at the begining of cycle (maybe 1/4 cup). Good flavor too.

Cranberry Scones

Reviewed: Jan. 19, 2010
VERY GOOD as the recipe is. I made two circles over a baking sheet, mark the sections with a knife and put them in the oven. At 3/4 baking time cut wedges all the way through and brushed tops with 2 tablespoons of the cream/egg mix. I happen to have some bittersweet ganache leftover, took scones out of the oven and just for fun drizzle half with the chocolate... My family and I found that this little addition improves and enhance the flavors to make them EXCELLENT!!!

Bread Machine Pizza Dough

Reviewed: Jan. 17, 2010
Result were outstanding. Used half wheat flour and half white bread flour plus sub instant yeast with 1 tablespoon of fresh yeast cake, just because I have it on the fridge. Let stand on fridge overnight. Brushed olive oil all over before spreading tomato to have a crunchier crust.
