Creamy Chicken and Wild Rice Soup
I've made this recipe many times, and I just love it! I wanted to add my healthier version though- first, I cook the rice as directed in a medium pan (I use 6 oz. Uncle Ben's). Then, I melt 1/4 cup butter, whisk in 1/4 cup flour, 2 cups of milk (typically skim), 2 cups chicken broth, salt & pepper, and cook to thicken. I add the cooked rice & chicken, and heat through. This is my favorite soup!
