My-Hop Pancakes

Fresh Apricot Crisp

I made as is and would tweak the next time. I did add 1 Tablespoon flour to apricots because I had some very juicy ones. I would add almond extract to the apricots next time and maybe some nuts to the topping.

Crispy Baked Walleye

This was very good. I made as is, but would cut back on the salt next time as I am a low sodium eater. Next time I make this I would like to try putting the greased cookie sheet in the oven for a few minutes to get it hot and the bottom more crispy. Yummy!

Dandelion Salad

I too grew up eating this. Ours contained hard boiled egg and bacon with a oil and viniger dressing. It is still a rite of spring for me. For those who did not like the bitter flavor - note the greens must be young. Anything that has a flower bud (even small) - it is too old. Do try this if you never have!

Shrimp and Asparagus Fettuccine

This is a lovely lunch and it does not take long to make. I did substitute butter for the olive oil when cooking the shrimp, mostly because I wanted the taste of the butter in this dish.

Roasted Carrot Salad

I made this with the ingredients listed. Instead of putting the nuts, carrots and oil in the oven, I lightly greased a sheet and did just the carrots. I whisked the oil with the vinegar, honey, garlic and S&P. I added the cooled carrots with the nuts and fruit and then tossed it, adding the lettace at serving time. This is different flavor with a pretty presentation. I will make again and again!

Traditional Cranberry Apple Crisp

This is very good, I like the touch of orange. The only thing I will change is to bump up the cinnimon by 1/2 teaspoon, which is personal preference. Will make again!

Canada Day Nanaimo Bar Cheesecake

What a nice cheesecake this is! I was not able to find custard powder. I Goggled it to see what this was and then substituted instant vanilla pudding. I did make mine in a 9x13 and served as bars. Next time I would use a spring form pan, the first bars would have been easier to get out.

Bee's Mac and Cheese Bake

I remember this from when I was a kid too. I made as is a a trip down memory lane. next time I would add hamburger, sausage or bacon as it is a little bland. This would make a really good side dish for spicy meats.

Baked Penne and Smoked Sausage

This is tasty and quick to make. Not spicy, the soup and cheese make it mellow. I took away a star purely because of the sodium content. I would make this again, but would use ground pork with some sage added and make my own cream sauce. This would be a good recipe to take to a potluck.

Blueberry Quick Bread

Yummo! I did toss the berries and nuts in the dry ingredients as that will keep them from sinking once you add the wet stuff usually. They "stayed in suspension" nicely. This is a keeper!

Irish Canadian Beef Stew

Vanilla Honey Simple Syrup

This is not the typical syrup but I really did like it. I put it on buttermilk pancakes and found it to be a light, pleasing taste. I did use 1 teaspoon of vanilla becuae 2 seemed too much. I could always add more I decided. For me 2 would have been too much. Do try!

Chocolate Almond Popcorn

I made the recipe as written. This was easy as can be to make and I like the almonds. Flavorwise, it was a nice light taste, one of those things that the more you eat the more you taste it. I might make extra coating as it did not make as much as I liked. I am planning to make this as gifts this Christmas.
