Bacon and Tomato Cups
I tried a couple of different variations on this recipe. All turned out great. First I cut the biscuit into 1/4ths. It was perfect for the mini muffin pan. My pan only holds 24 so I only used 6 biscuts. My first mixture was for the kids, only Cheddar cheese and bacon. Second mixture was Cheddar cheese, bacon, and a small amount of good flavored spagetti sauce. My last mixture was for me so I used Cheddar cheese, bacon, spag sauce and fresh basil and chives. I liked all 3 of the variations. I didn't use any mayo at all. Without the spag sauce the cup comes out crispy, with the spag sauce it comes out softer.

Coconut Shrimp I
This is fantastic! I used dark ale beer. I use a dipping sauce instead of the marmalade. This is a family favorite. I have also used regular root beer instead of beer and it comes out great!

Cabbage Roll Casserole
First of all, I cut the recipe in half. I used 1 pound of ground beef, 1/2 cup chopped onion, 2 garlic cloves, a sprinkle of oregano, 1 can of diced flavored tomatoes, 1 bag of coleslaw mix from the produce salad shelf, 1/2 cup uncooked white rice, 1 can beef broth. I also used 1 tablespoon each of garlic salt and onion salt. I cooked for 1 hour, then I added 1 can of tomato soup and cooked for 30 minutes more. My husband and I enjoyed it, but he thought it needed salt and I thought it needed more seasoning. I will surely make this again as it is much easier than stuffing cabbage leaves. I think I will try brown rice and maybe 3/4 cup next time. I cooked this in a 9"x13" baking dish. It serves 6 easily.
