I made some significant changes because I'm on a diet, so keep that in mind. I substituted the linguine with shirataki (aka "miracle") noodles, and I grilled the chicken on my Foreman grill before cutting it into smaller pieces. I also made a roux with milk and the cheese, although I'm not sure if I saved many calories by doing it that way. I also used a whole red pepper and half a bundle of green onion, which seemed to be the right ratio of ingredients.
Overall, this approximately cut the calories in half for this recipe (I guesstimated it at 500 to 550 kcal). On top of that, both my bf and my friend that was over for dinner really loved it (as did I). I think it's important to mention that it requires a quality Cajun seasoning to be an excellent dish...we just happened to pick some up last time we were in New Orleans.
