Braised Balsamic Chicken

My husband would give it 5 stars. It was good to me, but I wasn't scrambling for more--though I will definitely put it in rotation. Followed others: only used 1/4 cup balsamic vinegar (used Wegman's store brand and it was fine) and 1/4 cup chicken broth and added fresh garlic. I accidentally thought I had diced tomatoes, but after I'd already started cooking, I realized that it was actually tomato sauce. So I used just half the can. I mixed the sauce, vinegar, and spices together and set aside. I placed chicken directly on top of the onions and garlic and moved everything around every now and then. Simmered it in the sauce for just the requisite 15 minutes. Tasty!

Baked Asparagus with Balsamic Butter Sauce

Such an easy way to make asparagus. I didn't add any salt since the butter and soy sauce both have it. Added red pepper flakes instead of regular pepper.

Remoulade Sauce a la New Orleans

Used it on crab cakes. Tasty, but a little thin. Need to figure out a way to thicken it up--or perhaps just read other the reviews. I'm sure the answer lies in there somewhere.

Chicken and Red Wine Sauce

I followed the directions of sheinshine with a twist and it was a hit! I used boneless skinless thighs and seasoned the chicken before browning it with seasoning salt and cayenne. I then removed it from the pan and sautéed ONIONS and garlic in the pan drippings. From there, added just 1/2 cup of red wine and 1/2 cup of chicken broth and 1/4 cup of brown sugar (instead of putting it directly in the chicken). I let it come to a boil, stirred in a tablespoon of cornstarch to thicken up the sauce. Then I put the chicken back in the pan to simmer 10 minutes per side. I had planned on sautéing spinach to go with it, but got lazy, so I just added it to the chicken when there was just 3 minutes left. Great 1-pot meal (though I decided to serve it over brown rice--so not quite one-pot). DELICIOUS

Tam's Black Eye Peas

I used dried black-eyed peas and just smoked turkey necks (no turkey legs or sausage). Very good. Boiled turkey necks and other ingredients for about an hour, poured peas in and simmered for about 1.5 hours, and it turned out fabulously.

Italian Sausage, Peppers, and Onions

We've been trying to find something different to do with Italian turkey sausage besides add it to spaghetti. This was an EXCELLENT alternative. My boyfriend loves it.
