Tuscan Soup

Reviewed: May 22, 2011
This soup was DELICIOUS! It tastes identical to the zuppa toscana that's at Olive Garden. I followed the recipe except for using half and half in place of evaporated milk. I also added some fresh grated parmesan to the soup as it was cooking as well as on top before eating. Pair it with parmesan french bread and it is an amazing and satisfying meal!

Easy Lemon Cookies

Reviewed: Dec. 1, 2010
As written I thought these cookies were good...not amazing but definitely good. I made the following changes which made them MUCH better. Instead of vegetable oil I used 1/3 cup melted butter. I also doubled the lemon extract and added a couple tablespoons of lemon juice as well. I also added a cup of gingerale which made it taste almost fizzy! Gave it a lot more tang and great flavor! I definitely will be making these again!

Chicken Tortilla Soup V

Reviewed: Apr. 19, 2010
Really good soup! I make this about once a week. This is my "no time to cook" meal because it is so easy! I follow the directions exactly except that I usually don't defrost my chicken first and just saute the frozen breasts in the oil which starts the defrost process. I then add in the onion and garlic and let it cook with the chicken for a few mins...then I add the broth and the rest of the ingredients including at least one can of kidney beans. I usually use a medium chunky salsa. I have added both rice and chips to this soup before and they are both really good. This is not only nutritious but yummy and it satisfies my whole family! Thanks for the great recipe!!

Chicken Piccata II

Reviewed: Nov. 20, 2009
This recipe was 5 stars all the way!!! It rivaled the Cheesecake Factory's Chicken Piccata which is my all time favorite. I did make a few changes based on other reviews and to suit my preference. Like some other reviewers I also like my breaded chicken to be crispy so I followed the recipe for deep south fried chicken on this site for the chicken. I also used 3 big boneless skinless chicken breasts cut in half rather than pounding them thin which I think works better and it holds its shape better. I fried the chicken till it was crispy and browned and fully cooked and then put in the oven to keep warm while I made the sauce. I doubled the sauce, added some dried basil and italian seasoning, also added a couple tblsp of butter. I added the chicken to the sauce to coat right before serving. Served with whole wheat spaghetti and used the extra sauce on the pasta. It was AMAZING! I will be making this once a week!!!!

Cheesiest Potato Soup

Reviewed: Sep. 10, 2009
This was SO yummy! I wanted to make a huge pot so I tripled the recipe. I made it as directed except that I added some hot sauce to "kick it up a notch" and I used a potato masher to keep it chunky. This will be made MANY more times in my house.

Boilermaker Tailgate Chili

Reviewed: Sep. 4, 2009
This was hands down the best chili I've ever had! i made a couple substitutions based on what I had on hand. I used three regular cans of chili beans instead of a spicy one and just added extra hot sauce to replace the spice. I also added half a zuchini and some fresh corn from my garden as well as a small garden bell pepper. I didn't use the beef bullion because I didn't have it but I didn't feel it needed it. I used an italian seasoning mixture instead of adding all the herbs individually and it was great! And as a lot of other reviewers did, I added a full bottle of beer (hefeweizen) to give it more flavor. i followed the recipe for everything else. I carmelized my onion before adding it in, and cooked this in the crock pot for about 5 hours prior to dinner time. It was so hearty and satisfying with shredded cheddar and corn chips... I will be making this one often! Thanks so much for the great recipe!

Shrimp Lemon Pepper Linguini

Reviewed: Aug. 16, 2009
I loved this dish! i made a couple modifications based on other reviews and doubled the sauce. I also had some red and yellow peppers and some mushrooms that I wanted to use up so I sauteed those at the same time as the garlic and it made it healthier and way more colorful and unique. i also added capers and used whole wheat spaghetti in place of the linguini. I will definatly make this again. The shrimp were so tender and took on the flavor of the sauce. I also added several dashes of hot sauce and it gave it a nice kick. LOVE this one!!

Deep South Fried Chicken

Reviewed: Mar. 16, 2009
I love this recipe. I didn't have shortening though so i lightly coated the chicken in mayo before I tossed them in the flour. The chicken came out SO tender and juicy and i cut it up to put in salad and my husband said he wants this one again for sure!

Pasta with Blue Cheese and Walnuts

Reviewed: Feb. 26, 2009
I absolutely LOVED this pasta but I made a lot of substitutions. I used bowtie pasta which was recommended in another post. I didn't have walnuts so i omitted those, I sauteed a ton of elephant garlic in a little extra olive oil, added sun dried tomatoes and blue cheese at the end. It became this amazing sauce. I also roasted some grape tomatoes in the oven until they burst and smashed with a potato masher with some balsamic vinegar and olive oil and tossed that into the pasta as well. this is seriously one of the best comfort foods. yummy and interesting.

Chicken and Red Wine Sauce

Reviewed: Feb. 10, 2009
I loved this recipe and so did my husband. I cooked it like they said, but added mushrooms, onion, and a ton of garlic just like other users. I also only added about 3 heaping tablespoons of the brown sugar and a lot more wine:). It came out really yummy and I actually made some extra of the sauce to give it a little more flavor. I paired it with garlic mashed potatoes. I will definatly make this again.
