Banana Muffins II

Soft and flavorful. Super quick and easy! I love a good baking recipe that's delicious on it's own, but also plays well with minor adjustments. I have tried substituting some of the white sugar with brown sugar, delicious. I often add sliced almonds just before putting into the muffin cups. A splash of vanilla made an amazing addition as well.

Three Ingredient Peanut Butter Cookies

So stinkin' easy, my little guy loved making them and he could help with all steps but of course putting them in the oven. We did make a criss-cross pattern on them, it just seemed right and my son threw in the last quarter of a bag of chocolate chips. Besides that followed exactly. The 1 dozen really made 2 for me. They come out fragile. Let them cool for about 2 minutes and they are ready to eat.

Chocolate Cakes with Liquid Centers

Very easy instructions to follow, an instant favorite. I cooked for slightly longer because my oven is older. The only caution that I have is that after the cakes had cooled, the middles had cooked by carry-over cooking. Eat them right away! =D

Halloween Halfling Meatloaf

For meatloaf, it's very moist, which was great. With a tiny bit of worchestershire sauce it didn't even need the ketchup (vital since we have a little one who hates condiments). Very simple to make, cute idea for a Halloween meal.

Anaheim Fish Tacos

I agree with the soup-y sauce comments, but a slotted spoon, a little sour cream in the mix, and it becomes an asset. The leftovers reheated properly made great tacos for lunch the next day, and served well over a bed of rice a few days later. Little one didn't think it was a hit, but he ate it well. We changed to a seafood blend in place of halibut, onion in place of leek. A great alternative to fried versions, healthier, and leaves room to let individual creativity come into play for the perfect flavor.

Manicotti Alla Romana

A little salty than our taste, but nothing we can't adjust. Messy to make (we need to perfect our ziploc bag skills), but oh my! The white sauce is definitely my favorite, and really made the flavor of the dish. Very satisfying.

Colleen's Slow Cooker Jambalaya

This is one good dish! It smelled so good while it was cooking, and it tasted so much better! We put it on a nice bed of rice and topped it with a small dallop of sour cream and enjoyed the spiciest meal of our lives in bliss. Great leftovers as well. Loved it so much we aren't even waiting a week to share this one again with extended family.

Triple Dipped Fried Chicken

Lasagna Alfredo

This is a good recipe. I added mushrooms to the spinach mixture, and onions to the chicken mixture, turned out very well. My advice for others...1. reduce the cooking time (especially those that found it dry), 2. if you reduce the cooking time reduce amount of alfredo sauce (or it will end up alfredo lasagna soup).

Greek-Style Shrimp Salad on a Bed of Baby Spinach

Awesome recipe. I tried putting the shrimp in a bag with the olive oil, lemon pepper and sea salt and omitting the sugar as suggested by a reviewer before skewering. The shrimp tasted good enough to eat alone without everything else, but together it was fabulous.
