Cheesy Zucchini Casserole II

This is such a great recipe! The amount of zucchini should be adjusted to the size of the vegetables, but you can always tell by looking at it. The first time I made it, I used a combination of summer (yellow) squash and eightball squash, because that is what I had in my fridge. The boyfriend LOVED it, and took some to work to share. Last night I used the recommended zucchini--but added an jalapeno for a little kick. Perfect! The only change I would suggest is the topping; and that is just because I prefer to use Parmesan cheese on my casseroles instead of crackers. Only a personal preference. Thanks for a great recipe that will get lots of use!

Baked Pumpkin Bread

Sooo good! I had just baked a pumpkin, and used some of it for this bread. It tasted a lot better than my normal recipe, and was much healthier. I even used whole wheat pastry flour and applesauce instead of butter.

Spaghetti Squash I

Wow! I got a spaghetti squash in my CSA crop share, and didn't know what to do with it. I found this recipe and had all of the ingredients, so I made it as a main dish for one. SO GOOD!! This will be a regular recipe from now on. :D

Strawberry Nut Bread

This bread was awesome! I made mini-loaves to share with friends, and they all raved!! The only tweaks I made were for nutrition, not taste: canola oil with Omega-3s instead of vegetable oil, reduced sugar by 1/4 cup and used a half white/half brown mixture, substituted half the flour with whole wheat pastry flour, extra strawberries and cinnamon, and added a handful of wheat germ. Still tasted AMAZING!!!

Jalapeno Popper Chicken

Wow! This turned out so delicious, and it was super easy...The only changes I made were that I used turkey breast cutlets (that's what I had on hand) and I baked them to save some calories. They still came out great, and I didn't feel bad "too full" after dinner. Today I took some leftovers in to work, and one of my co-workers was eyeing the container with envy! LOL I made this with gandules verdes rice and some spinach sprinkled with goya vegetable seasoning...added a beer with lime for an epic dinner. Thanks for the great idea!

Spiced Mixed Nuts

Super easy and delicious! They are a little difficult to separate, but I noticed that after 2 days they were much easier to handle...Next time I will try to wait until the next morning to separate.

Anise Icebox Cookies

So delicious! I used anise extract instead of aniseed because that is what I had on hand, and it worked well. I was afraid that the anise flavor would be overpowering, but it definitely wasn't. A keeper!

Apple Brownies

Funny, I received this SAME recipe from my college roommate's grandmother! She used to send her down from New Hampshire with boxes of these bars, and we would polish them off in one sitting. Now that I'm older, I replace half of the flour with whole-wheat pastry flour and half of the sugar with brown sugar. It still tastes great, but I feel a little less guilty about demolishing them...

Raspberry Pie II

So easy to make, but still really yummy! I wish I had known it was so easy to make a homemade berry pie. Also, it was healthier than some of the other recipes. I would have given it 5 stars, but it was a little watery--another tsp or 2 of cornstarch should do the trick! Thanks for the great recipe. :)

Grilled Buffalo Wings

These were great! I love wings, but the fried part always prevents me from making them at home. I was really excited to try these, and they went fast. For the hot sauce, I ended up using a mixture of three different kinds to use them up...still tasted great! Definitely a keeper.

Wonderful! I made this for a July 4th BBQ, and even my friends who don't drink tried it and loved it. My "redneck" boyfriend loves it and is happy to have a special Hillbilly drink. Thank you for this recipe!

Roasted Brussels Sprouts

Very good! I also added some fresh chopped garlic that I had left from the main dish, but that was the only change I made. My boyfriend loved them, too--even though he "can't stand" Brussels Sprouts. I used the leftovers as a salad topper for my lunch the next day--very filling!

Margie's Sour Cream Pork Chops
