About this Cook
I am DEFINITELY an "old soul" raising my family in a VERY modern world. Depression cookbooks are my favorite and I am COMPLETELY fascinated with how life was way back when. My children are raised with a twist of old school knowledge and modern applications.
My favorite things to cook
I LOVE to cook just about everything from breads to casseroles, desserts to restaurant recipes. I tend to be a 'southern style' cook, even tho I was grew up near Chicago. Beans and rice, breads, soul food.....everything is made from scratch. EVERYTHING!!!
My favorite family cooking traditions
We don't eat out and I don't use anything from a box (with the exception of pasta, which is my once every two weeks lazy meal!) Every meal is cooked from scratch down to the breads. I LOVE to try new recipes and my kids decide if it's a "keeper" or not. :)
My cooking triumphs
My biggest triumph --my baby, my pride and joy-- is my homemade BBQ sauce. That is the ONE thing people request me to bring to EVERY BBQ. Friends have asked me to make GALLONS of it for Christmas gifts!
My cooking tragedies
I almost burned my grandmothers house down trying to cook catfish on her electric stove. I was used to my gas stove, and I turned to walk over to the fridge while I was heating up 2 tbsp of oil in the pan The heat was only on 5 but within the 30 seconds it took me to open the fridge door, the pan caught on fire, shot flames to the ceiling and even tho I was raised in that house, I couldn't remember where the lids were to the skillet!!! I was trying to be calm and ask my grandmother, who walks into the kitchen and sees her stove on fire! Needless to say, I was never allowed to cook in her house again! LOL

Golden Sweet Cornbread
BEST CORNBREAD RECIPE EVER!!! This recipe is FABULOUS!!! I used wheat flour for the white flour and canola oil in place of the veg oil to experiment with making it just that much healthier and it is sooooo light and fluffy!!! I was afraid they would be a little dry form the wheat flour, but they were PERFECT! I made 12 corn muffins and they were HUGE...I could have actually gotten about 18 from this recipe honestly, but I like how big they turned out!! This is my NEW cornbread recipe, with the substitutions!!!

Light Oat Bread
Was VERY good! I made a second loaf with a few changes that was even better to me! I switched out half the white flour for whole wheat flour, used olive oil instead of the butter, and I added an extra TBSP of brown sugar. Easy to make, smelled FABULOUS and even my EXTREMELY picky stepdaughter, who REFUSES to eat oatmeal in any way shape or form (even cookies!!) gobbled it up and even said "Mmmmmm that's really good!" Definitely going into my rotation of breads. DELICIOUS!!!

Sausage and Cornbread Dressing
FABULOUS!!! I made it for the first time for Thanksgiving and my family LOVED it!! Hubby has requested we stick to this recipe! I used sweet italian bulk sausage, because that's what I had on hand and I wasn't tryin to make a trip to the store the day before Thanksgiving!! LOL I used poultry seasonings instead of individual spices (again, thats what I had on hand) which worked LOVELY! I didn't measure, I just dumped some in! I also used some of the turkey drippings instead of chicken broth and I omitted the butter (out of sheer forgetfulness) I will experiment with adding an egg and more broth next time because it was a bit dry for my taste. DEFINITELY a 'keeper recipe' Thanks!! =)
