A little about me...I was born and raised in Dallas, Texas but moved with my job to Orlando, Florida in September 2008. I love living in the Sunshine State! I am a Manager at AT&T, supporting the Lightspeed build here in the Southeast. I have 3 cats (2 kittens and an older cat) and 1 dog. I love to read, visit the beach, and watch movies.
My favorite things to cook
I love to cook a lot of different things, but particulary main dinner dishes. I like to cook seafood, stir fry, Mexican food, and BBQ - so I think I would say are my favorite dishes. I tend to experiment and change recipes up to mix up flavors - most of the time it works out great - limited times it is waaaaay too salty LOL. :))
My favorite family cooking traditions
I think my favorite cooking traditions are centered around the holidays - my family tends to make the same things every year for Christmas and Thanksgiving. We can't go one holiday without Turkey, Ham, Corn Casserole, Green Bean Casserole, Sweet Potatoes, Mashed potatoes, and some sort of Pickle/olive tray. (Corn Casserole is my favorite)
My cooking triumphs
I've had several things I have tried that really turned out well. One of my favorites is turning a basic corn casserole into a Green Chile Corn Casserole by adding a small can of green chile REALLY changes the flavor and gives it a whole new spicy twist. I've also made an Italian Creme Cheese cake that I was really proud of (even though I was VERY emotional when my egg whites didn't peak). I've also done some interesting flavors with basic fish recipes, such as tilapia or ahi tuna that turn out great every time!
My cooking tragedies
I mostly have a cooking tragedy when I try and pare down a recipe for 2. Normally, this works out ok, but if I misjudge it, it will end up being too salty and I find it a failure. Luckily, has the ability to change the serving size!

Surprise Banana Cake
I took didn't change this recipe at all except to make it into cupcakes! It is wonderful and I got rave reviews from everyone who ate them. Great recipe, thanks for sharing! I will definitely be making these again.

Roasted Potato Salad with Balsamic Dressing
I loved this potato salad! I served it today to my crew with a few minor modifications - I used Spicy Brown mustard instead of Dijon because that is what I had on hand. I also used Garlic Pepper instead of regular pepper. My grocer didn't have any Gorgonzola cheese so I used Asiago. I omitted the olives because I'm not a huge fan, and the taste came out great! Everyone loved it....will definitely make again. It came out beautiful with all of the different colors - someone even made a comment that it looked like a salad from a magazine. Thanks for the recipe!

Pesto Turkey Burgers
I thought this recipe was fantastic! I followed it pretty much to a tee, without the addition of the extra seasoned salt half-way through. I cooked my burgers on my George Foreman for 5 mins - they had an excellent crust on the outside and were very juicy and flavorful on the inside. I only made 2 burgers and made the rest into mini meatballs for tonight's dinner (oven - 450 degrees for 15 mins). I think the flavor will go well with any italian side I want to pair it with. Thanks for the recipe, I will definitely use it again!
