Lemon-Cream Cheese Cupcakes

I made this as a two layer cake vs. cupcakes. I also added the whole eggs instead of egg whites and used fresh lemon juice for the frosting. Oh my goodness. This is my favorite summer cake from now on. I got so many compliments on this! The icing is incredible. Next time I will try adding some raspberry preserves between the layers, for a different twist. Not that it needs any improvements! Try this cake, you will love it!

S'mores Crumb Bars

These are the best! So easy and delicious. Everyone who tries them loves them. I put all of the crumb mixture in the bottom, then top with the chocolate chips and marshmallows. I store these in the fridge, we prefer them cold. Try one with a glass of milk, you'll love them too!

This is one of our favorite recipes! We have an abundance of basil in the summer from our garden, and we can't eat enough of this stuff. So easy to make.

Two Ingredient Pumpkin Cake

This cake made as directed is delicious, low fat and easy. It is hard to stir together, but worth the elbow grease. We like to add about a cup of semi-sweet chocolate chips to the batter and frost with cream cheese frosting. You can also make a two ingredient chocolate cake! Just use a chocolate cake mix with your can of pumpkin. Trust me, you will never taste the pumpkin! It is just a moist, delicious chocolate cake without the eggs and oil. I also like to add chocolate chips to the chocolate version, and frost with vanilla frosting or cream cheese.

Pumpkin Apple Streusel Muffins

I can't say enough good things about these muffins. I add pecans to the topping, and they come out toasted and delicious. These taste like something you would buy in an upscale bakery.

Famous Chicken Francaise

This recipe is exactly like they serve in the Italian place in my town. I make sure to highly season my flour mixture, tasting as I go. As listed, it can be a little bland. I use thin & fancy cut chicken breasts. I add some zest to the broth/lemon mixture, and when I simmer it all together add three or so lemon slices then. This makes it so lemony and good. The "soggy" coating is so delicious. We serve over thick spaghetti and enjoy it every time! So good I can't believe I'm making it at home.

These are so easy to make and yummy! I give only four stars because they taste very buttery, but I suppose that's a good thing. A very sweet cookie also. Would be good with a mix of different chips.
