Healthier Soft Oatmeal Cookies

Here are my changes: a cup of applesauce instead of butter, 2 cups all purpose flour (didn't have any whole wheat flour), no dates and dark chocolate chunks. They were really good! Very soft, almost like a muffin texture. Would recommend!

Chewy Chocolate Chip Oatmeal Cookies

These are delicious! I made half the recipe, following everything exactly and they turned out great! I used milk chocolate chips instead of semi-sweet and instead of walnuts I used Skor toffee bits (about 1/3 cup). They took about 14 minutes to bake and came out soft and chewy. Perfect texture for an oatmeal cookie!

Lemon Raspberry Jumbo Muffins

These were great! I used buttermilk instead of the cream so I only used 1 tsp of baking powder. I used 1 tsp of lemon zest instead of the extract as well. I also used blueberries, blackberries and apple instead of raspberries. They made about 18 regular size muffins and baked fro 25 minutes. I found these to have a little more of a cupcake taste than a muffin taste but I thought they were delicious!

Blueberry Cornmeal Muffins

These turned out great! I made a couple adjustments to the recipe because I wanted to use up some buttermilk: 1 cup buttermilk instead of milk, 1/2 tsp baking soda and 1 tsp baking powder (instead of 1 tbsp). I baked them for exactly 20 minutes and they came out perfect and moist! Next time I would try to use a bit more cornmeal so that it stood out more.

Rhubarb and Strawberry Pie

Pie turned out great! I followed the recipe exactly, except I baked it for 15 minutes at 425 and 30 minutes at 375. I baked it the night before and it wasn't runny at all. Great recipe!

delicious muffins! wayyyy better than my mom's, just don't tell her that! although next time i would make 12 instead of 8 huge muffins, i just prefer them smaller. i will definitely be making them again!
