My Best Clam Chowder

Family said it was the best clam chowder they have ever had. I loved it too, but the calories!!! I cut my vegetables pretty small and they did cook fairly quickly, so I would recommend checking them frequently right from the start. (I would have preferred to have turned off the burner the moment the veggies became tender.) I cooked the half and half mixture until it was very thick prior to adding the vegetables, since I knew I would be watering it down with the clam juice/water mixture. I never did add all of the clam juice/water, just enough to get the consistency I was looking for in the clam chowder. I did make one MISTAKE, I added Balsamic vinegar instead of the red wine vinegar. I thought maybe I had ruined the dish, but it was delicious with the Balsamic. Not sure if I would make again, even though it was very good because of the calories involved.

Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

Husband said it was the best "chili verde" he has ever had! I followed the recipe exactly, but used Oregano 1: 2 ratio as a substitute for marjoram since I didn't have Marjoram on hand. I didn't feel like simmering it on the stovetop, so I threw everything into a crockpot and then went horseback riding and both my husband and I came home to a delicious meal. Thank you so much for this recipe!

Roasted Potatoes with Greens

This is an excellent recipe! Being a cheese lover, I disappointingly forgot to put cheese on this dish...BUT it was still amazing! I also used Olive Oil (wasn't paying enough attention to the recipe), but when I realized my error I added the butter anyways. I used my cast-iron skillet to brown the garlic and rosemary, tossed the potatoes in, and put the whole skillet in the oven. Love when I get to use my cast iron! The recipe is full of flavor with just the right amount of crunch...we have wild golden potatoes grown in our backyard (planted them once and they just keep producing with no attention, no pests, nothing but pure goodness - all they need is water) so I used those. The addition of the spinach was superb, but I love, love spinach. What a nice bonus! This would be a very simple, but impressive dish for guests. Thank you!

Asian Salad

Didn't care for this. I think I will maybe add the seasoning packet from the noodles and I wish I had just toasted the noodle mixture in the oven and not in all that butter. My family just wasn't impressed.

I loved this salad. I used Balsamic vinegar, added a seeded jalapeno (finely chopped) and plenty of freshly ground premium black peppercorns. My husband and I couldn't wait a day it was so yummy!

Avocado Shrimp Ceviche-Estillo Sarita

Loved this recipe and so did everyone at my party! This is how I will make Ceviche from now on. I used half shrimp, half imitation crab (both fully cooked) and doubled the cilantro (everyone loves cilantro don't they?) I served it with Tostitos scoops as an appetizer. Thank you!!!

London Broil II

I won't normally buy a London Broil, but hubby brought one home from the store. I used this recipe and wow I was impressed how this recipe transformed what normally to me is a tough piece of meat into something much yummier! For me this is the only way I will cook it in the future; guests loved it too.

Chef John's Stuffed Peppers

Chef John did it again. Another 5-star winner! Family loved it. I did put mozzarella cheese on the top, which made a lovely presentation. I could not find finely grated Parmigiano-Reggiano cheese, so substituted Parmesan cheese instead. Next time I cook it (already getting requests after 3 days - lol), I am going to use ground turkey and quinoa! Great recipe to double batch and freeze for another meal!

Chef John's Caramel Chicken

This dish caused cravings! Sooooo good! More work than I anticipated, but I think that is because I had to make my own fish sauce as I couldn't find it in the store. Plus I think I put too much of the brown sugar mixture in at first, causing me to spend extra time reducing it. I will cook this many times over. Lovely recipe popping with flavor! A winner; certainly good enough for guests!!!

Chef John's Deviled Eggs

This recipe was better than D's Delicious Deviled eggs and I think it has loads of potential. I would have to modify it in the future and add more sriracha, mustard, and salt to kick up the flavor. My husband didn't care for the candied jalapeno on top, but I thought it added interest and enjoyed it.

Loved this! And my family loved it! I am not a vegetarian or a vegan, but I could eat this almost everyday!!! No changes to the recipe, except for the red pepper flakes; I didn't have any. A perfect recipe and so good for you! A winner!

Honey-Brined Fried Chicken Breasts

Wow! Great recipe. I used half breast with ribs, so I had to cut them in half so they would cook to the correct temp - had to used a thermometer because they were so thick. I did remove the skin and these came out juicy and o so flavorful. A winning recipe! Thanks Chef John!!!!
