Special Irish Beef Stew

I added a pinch of basil, thyme and some pepper to it - YUMMY. My husband who doesn' t like beer stew thought it was great. Very hearty and flavourful and was easy to make.

YUMMY Bread! I've been looking for a potato bread recipe for years and this is it. I made this to go with some Guinness Stew and it was fantastic. I cut back the salt to half and couldn't manage to work in all the flour, but the bread was still solid but not heavy and SO delicious.

Swedish Apple Pie

I've swapped out almonds, cashews and pinenuts for pecans (don't like them) over the many times I"ve made this - otherwise followed the recipe. FANTASTIC! With Granny Smith apples there's a "zip" to it. With ice cream it is absolute heaven...

Fabulous Fajitas

Very tasty - I've made it so often I've fiddled with the recipe to make it to my exact tastes. I like spice, so I tossed in a teaspoon of red chili flakes and some garlic powder and nixed the seasoning mix. I've also started to grill them - I lay out the taco shell flat, spread a bit of grated low fat cheddar, then the filling, a bit more cheese and another taco chell. I pan fried them or cook them on an electric grill until the shells are crispy on both sides, cut into 6 wedges and serve with salsa and fat free sour cream...an absolute favorite of mine.
