Rice Stuffing with Apples, Herbs, and Bacon

This was the stuffing I used for my very first TG Turking Baking experience, and boy did I LOVE this!!! I didn't have any wild rice, so I used basmati (I live in tokyo, and wild rice is very uncommon). I also adore cranberries, so the craisins were delightful. I had some stuffing left over too, and it was good as is, but was even bettr when combined with the turkey. Highly recommended!!!

Kashmiri-Style Kidney Beans with Turnips

Mexican Whole Wheat Flour Tortillas

Yes, it's a LOT of work, but once they're done, you can always throw them in a zip lock bag and freeze'em!! I added garlic powder, which was great ;-)

Bubba's Jambalaya

I had to replace the seasoning with krazysalt + paprika+ cayenne+garlic powder, but it still worked! Cajun and old bay is impossible to find in Tokyo. I omitted the ham since I didn't have any. Awesome dish!!

White Chocolate and Cranberry Cookies

A great hit! I used 1 cup whole wheat flour, and 1/2 cup all purpose, added chopped roasted walnuts. It made 18 cookies, and it was fun to watch my BF go back and forth btwn the bed room and the kitchen as he finished half of them that were still cooling. Would go great with green tea, fruit tea, or a glass of milk! I might cut down on the oil next time and bake for 12 min. since I use a microwave oven, and it turned out slightly greasy. You have to try the WHOLE WHEAT!!!

Salsa Chicken Burrito Filling

A bit too spicy...I'll cut down on the spices next time, and add bit by bit as I taste it. Fresh diced tomatoes and cilantro made it better too. It actually worked better as a topping over bean filling burritos and cheese, rather than a filling. I'll try again!

Apple Bread

Still in the oven after three hours...but I did not divide the recipe and put it all in one large loaf pan so it's totally my bad! The top and bottom was done, the middle still raw, but the parts done tasted pretty good. Also, I used 1/2 buck wheat to boost the protein. Perhaps another reason why it's taking so long. 2 cups of sugar seemed way too much for me, so I only put 1 and a half. I hope the center cooks thru soon!

Mom's Best Waffles

Awesome basic recipe that helped my very first waffle making experience! It was crunchy and fluffy, though all I did was mix and pour! I added vanilla as suggested by other reviewers. And to make it special, sprinkled the top of the batter with diced almonds, as seen in belgian waffle stands here in Tokyo. THIS was an excellent addition!

Chewy Chocolate Chip Oatmeal Cookies

These turned out great despite my crappy microwave oven (175c)! I added 1/2 cup of flour as suggested, and only used 1/2 tsp of salt as suggested by other reviewers. The texture was alright. It was a bit on the sweet side, so I will try reducing the sugar next time. I kept it 4 stars due to the sweetness and alterations.

Chicken Breasts with Balsamic Vinegar and Garlic

Easy, Flavorful, and low in fat! I Grilled the chicken breast after I evened it out and dipped it in white wine, and took it out early from the sauce to keep it moist. I used the same amount listed for the sauce but only 2 chicken breast halves, so I would double the sauce if I were to use 4 halves. i didn't have any thyme or bay leaves, so I used sage, and it still turned out good. Added a teaspoon of honey to enhance the sweetness and thickness.

Guacamole

I have made this several times, with a little creativity added, mixed in a TBSP of sour cream, or mascarpone cheese (whichever i had handy) and it made it even better!!! Must try!!!!!!!!

Might cut down on the sugar and add more lemon juice for some freshness, but was easy and delicious! I used plain yogurt instead of sour cream since that's all I had, and topped it with fresh blueberries & strawberries. An awesome delight ;-D
